<p>通常は厚みのある肉を使うところ、しゃぶしゃぶ用の薄切り肉を巻いて使う事で揚げずとも火が通りかつ柔らかく仕上がるという訳です。</p>
<p>豚肉だけで作っても良いのですが、今回は豚肉で長芋を巻いて中はシャクっとした食感の楽しい酢豚を作ります。</p>
<h2>材料（2人前）</h2>
<ul>
<li>豚ロースしゃぶしゃぶ用　200g</li>
<li>長芋　　　　　　　　　　300g</li>
<li>絹さや（あれば）　　　　3~4枚</li>
<li>塩　　　　　　　　　　　小さじ1/2</li>
<li>砂糖　　　　　　　　　　大さじ1</li>
<li>黒酢　　　　　　　　　　大さじ3</li>
<li>ケチャップ　　　　　　　大さじ1</li>
<li>醤油　　　　　　　　　　大さじ1</li>
<li>片栗粉　　　　　　　　　大さじ2</li>
<li>サラダ油　　　　　　　　小さじ2</li>
</ul>
<p>黒酢がない場合は風味は変わるが米酢や穀物酢で代用可能。<br />
その場合、砂糖を小さじ1追加する。</p>

<p>1.  長芋の皮をピーラーで剥き、大きめの1口大にカットしておく。</p>

<p>1. <strong>鶏ももひき肉250g</strong>に<strong>塩小さじ1/2（2.5g）</strong>と<strong>胡椒を適量、ごま油小さじ1、溶き卵1/2個分</strong>を加え、スプーンでよく混ぜ合わせる。</p>

<p>2. 湯を沸かし、スプーンを2本使って鶏団子を落とす。沸騰後中火で3分ほど煮たら完成。</p>

<p>3. 湯400ccに鶏ガラスープの素を小さじ1、醤油小さじ1と野菜を加える。<br />
ひと煮立ちしたらスープを沸騰させて残りの溶き卵を加え、味見をして塩で調味をして完成。</p>

<li>酒　　　　　　大さじ1</li>
<li>砂糖　　　　　小さじ1/3</li>
<li>サラダ油　　　大さじ1</li>

<p>豚こま肉はバラ肉やロース肉でも代用可能。</p>

<p>1.　ゴーヤを半割にしてスプーンで中のワタを取り除き、3mm程度の厚さに切る。</p>

<p>2. 長ネギ1本は1cm程度の厚さの斜め切りに、にんにく1かけは潰して皮を剥いて粗みじん切りにしておく。</p>

<p>3.　鍋にゴーヤがひたひたになる程度の湯を沸かしてゴーヤを1分間下茹でしてザルにあげておく。</p>

長時間茹でればその分苦味は抜けるがシャキシャキ感が無くなるため、茹で時間は好みで調整を。</div>

<p>家庭で作るのはハードルが高いと思われがちですが、今回は<strong>手軽に本格的な味を再現できる出来るレシピ</strong>をご紹介します。</p>
<p>本場重慶の火鍋を参考にしていますが、食材や調味料は基本的にスーパーで手に入る食材を使って作りやすいように少しアレンジしています。</p>
<p>中華の調味料は買い揃えるのにハードルを感じる方もいらっしゃると思いますので、代替品についても触れていきます。</p>
<p>はっきり言って<strong>そんじょそこらの店より美味しい</strong>です。<br />

<h3>＜スープ＞</h3>
<p>・水　　　　　　　　　　　1200cc<br />
・鶏がらスープの素(*1) 　　大さじ1<br />
・豆板醤　　　　　　　　　大さじ1<br />
・豆豉(*2)             　　　　大さじ1<br />
・にんにく　　　　　　　　2かけ<br />
・生姜　　　　　　　　　　2かけ<br />
・鷹の爪　　　　　　　　　お好みの量<br />
・花椒(*3) 　　　　　　　　小さじ1<br />
・五香粉(*4) 　　　　　　　5振り<br />
・サラダ油　　　　　　　　大さじ4<br />
・ラー油　　　　　　　　　お好みの量<br />
・牛脂(*5)　 　　　　　　　2かけ<br />
・醤油　　　　　　　　　　大さじ4</p>
<p>(*1)鶏がらスープは鶏がら1羽分とネギの青い部分をアクを取りながら1時間ほど弱火で煮出すとより本格的に<br />
(*2)豆豉とは黒豆を発酵させた調味料。なければ味噌で代用可能です。<br />
(*3)花椒は日本の山椒で代用可能。量は好みで調整をして下さい。無い場合は入れなくてもOK。<br />
(*4)五香粉は中国のミックススパイス。複雑な香りで一気に本格的な味わいになるので出来れば入れて欲しいですが、、、無くてもOK。ちなみに麻婆豆腐や魯肉飯にも使えます。<br />
(*5)牛脂はスーパーの肉コーナーにあるかと思います。入れることでコッテリとなりますので、お好みで用意してください。無くても少しあっさり美味しく作れます。</p>

<p>・鶏もも肉　　　1枚（300g）<br />
・砂糖　　　　　大さじ1<br />
・水　　　　　　大さじ1<br />
・酒　　　　　　大さじ2<br />
・醤油　　　　　大さじ2<br />
・生姜　　　　　スライス1枚<br />
・長ネギ　　　　5cm分</p>
<p>生姜はチューブのもの1cm分で代用してもOK。<br />
長ネギはトッピングなのでなくても構いません。</p>

										<content:encoded><![CDATA[<p>家で簡単に出来る<strong>プロ並みのキムチチャーハン</strong>のレシピをご紹介します。</p>
<p>チャーハンには様々な作り方、タイプがありますが、私が好きなのは<strong>パラパラでありながらもしっとり</strong>しているタイプ。<br />
故にたまごはご飯に絡みながらもあくまで具材として主張をするように仕上げます。</p>
<p>パラパラしっとりチャーハンの極意は<strong>水分のコントロールといかにご飯を優しく扱うか</strong>。<br />
豚肉とキムチは先に炒めることで水分を飛ばすこと。<br />
また、ご飯は潰すように炒めるとでんぷんが出てしまってパラパラにはならないので優しく炒めるのがポイントです。</p>
<h2>材料（2人前）</h2>
<p>・ご飯　　　　400g<br />
・たまご　　　2個<br />
・キムチ　　　150g<br />
・豚こま肉　　150g<br />
・にんにく　　小サイズ1かけ<br />
・青ねぎ　　　1本<br />
・サラダ油　　大さじ2<br />
・塩　　　　　小さじ1/3<br />
・胡椒　　　　小さじ1/3<br />
・醤油　　　　小さじ1</p>
<p>ご飯はほんの気持ち固めに炊いてあるものがベストです。<br />
冷やご飯の場合は調理の直前に電子レンジで熱々にしておきましょう。</p>
<p>また、豚の脂を引き出してご飯を炒めるため、豚こま肉は脂が多めのものがおすすめ。<br />
豚バラ肉で代用してもOKです。</p>

・ご飯は熱々を用意する<br />
・豚肉とキムチを先に炒め、豚の脂を引き出しキムチの水分を飛ばす<br />
・たまごが固まる前にたまごの上にご飯を加える<br />
・ご飯は潰さないようにヘラで切るようにして炒める</div>

<p>1. 具材をカットする。<br />
<strong>青ねぎ1本</strong>を斜めに小口切り、<strong>豚こま肉150g</strong>、<strong>キムチ150g</strong>は1cm幅に切る。<br />
<strong>にんにく小サイズ1かけ</strong>はすりおろしておく。</p>

<p>2. <strong>たまご2個</strong>をよく溶いておく。少し固めに炊いた<strong>熱々のご飯400g</strong>、<strong>塩胡椒小さじ1/3ずつ、醤油小さじ1</strong>も準備しておく。<br />
※醤油の写真がありませんがここで準備しておいてください。</p>

<p>3. フライパンを<strong>中火</strong>で熱して、<strong>サラダ油大さじ2</strong>と<strong>豚こま肉</strong>を加えて脂を引き出すように炒める。</p>

<p>4. 豚こま肉に火が通ってきたらおろしニンニクとキムチを加えて<strong>強火</strong>にし、キムチの水分を飛ばしながら炒める。</p>

										<content:encoded><![CDATA[<p><strong>手羽先を香ばしく焼き上げ、甘辛いタレでじっくりと煮込んだ中華の古典料理「貴妃鶏」</strong>（クイフェイチー）をご紹介します。</p>
<p>楊貴妃が愛したという事からこの名がついたと言われる貴妃鶏。<br />
あまり中華料理屋では見かけないかもしれませんが、<strong>とろとろに煮込まれた手羽と、手羽からでるうまみを吸い込んだ筍、椎茸</strong>がもう最高。</p>
<p>甘辛い味付けなので老若男女にウケるかと思います。</p>
<p>レストランなどでは手羽先を揚げてから煮込むレシピが多いようですが、家庭で気軽に作れるようフライパンで焼く方法をとりました。</p>
<p>煮込む時間はかかりますが、難しい手順はないので気軽に試して下さい。</p>
<p>また、本来は紹興酒をきかせて作るのですがこれもハードルが高いので日本酒で代用しています。<br />
紹興酒がある方はぜひ紹興酒を使ってみて下さい。</p>

<p>・手羽先　　　　10本<br />
・筍水煮　　　　1パック（150g）<br />
・椎茸　　　　　3個<br />
・絹さや　　　　6枚（無くてもOK）<br />
・長ネギ　　　　1/3本<br />
・生姜　　　　　スライス3枚<br />
・醤油　　　　　大さじ4<br />
・砂糖　　　　　大さじ2<br />
・酒　　　　　　100cc<br />
・サラダ油　　　大さじ1</p>
<p>酒は純米酒を使って下さい。<br />
また、もしあれば紹興酒を使うとより香りとコクの深い仕上がりになります。</p>

・砂糖と醤油を加えて20秒ほどカラメル化させるイメージで加熱する</div>

<p>1. 野菜をカットする。<br />
<strong>生姜スライス3枚分</strong>を粗みじん切りに、<strong>長ネギ1/3本</strong>は縦半分に切ってから5~6cmの長さにカットする。<br />
<strong>椎茸3個</strong>は石突を切り落として十字にカット、<strong>筍水煮150g</strong>は一口大にカットする。</p>

<p>・鶏むね肉　　　　1枚(300g）<br />
・サラダリーフ　　お好み<br />
・長ネギ　　　　　5cm<br />
・ねりごま　　　　大さじ2<br />
・醤油　　　　　　大さじ2<br />
・黒酢　　　　　　大さじ2<br />
・ごま油　　　　　小さじ1<br />
・砂糖　　　　　　小さじ1<br />
・ラー油　　　　　お好み<br />
・花椒　　　　　　お好み</p>
<p>黒酢を米酢や穀物酢で代用する場合は、酸味が鋭いので味見をしながら調整して下さい。</p>

<h2>作り方</h2>
<p>1. 鍋に鶏むね肉と鶏むね肉が浸るよう水（1ℓ以上）を張り、<strong>中火</strong>にかける。<br />
グラグラと沸騰したらアクを取り、<strong>火を止めて蓋をして40分以上放置</strong>する。</p>
<div class="blank-box bb-tab bb-point bb-blue">・冷たい状態から火にかけ、沸騰後は余熱で火を入れる事で火が入りすぎずしっとり仕上がる。<br />
・鶏むね肉が350g以上の大きい場合や冬場は余熱だけで火が入りにくいので、沸騰後1分ほど弱火でゆでてから火を止めると良い。</div>

<p>3. <strong>鶏もも肉1枚</strong>の皮を剥いで7mm~1cm位の細切りにする。</p>

<p>5. <strong>15分</strong>煮込んだら鶏皮を取り除いて味見し、醤油か水で味を整える。<br />
味がきまったら火を止めて水溶き片栗粉を少量ずつ加えて混ぜ合わせる。</p>
