<p>アメリカのテキサスにてメキシコ系移民によって生み出されたこの料理は、アメリカ全土ならず世界中で大人気。<br />
今日はそんなチリコンカンを自宅でも簡単かつ本格的に作ることの出来るレシピでご紹介します。</p>
<p>一度にたくさん作って冷凍しておけば日持ちもするので、作り置きにもおすすめです。</p>
<h2>材料（3〜4人前）</h2>
<ul>
<li>合い挽き肉　　　　500g</li>
<li>玉ねぎ　　　　　　中サイズ1個</li>
<li>にんにく　　　　　中サイズ1かけ</li>
<li>キドニービーンズ　1パック(豆だけで約230g)</li>
<li>トマト缶　　　　　1個(400g)</li>
<li>クミンパウダー　　小さじ1</li>
<li>カイエンペッパー（一味唐辛子）　小さじ1/2</li>
<li>塩　　　　　　　　小さじ1</li>
<li>オリーブオイル　　小さじ2</li>
</ul>
<p>キドニービーンズは缶詰か紙パックの水煮のものを使用。</p>

<p>2. フライパンに<strong>オリーブオイル小さじ2と合い挽き肉500g、塩小さじ1</strong>を加え、<strong>中火</strong>で挽き肉を焼く。</p>

<p>3. 肉が焼けたら玉ねぎとにんにくを加えて一緒に炒める。</p>

ただし、全て拭き取ってしまうとコクがなくなるのでほどほどに。</div>

<p>4. 玉ねぎが透き通ってきたら<strong>水200cc、トマト缶1缶、水気を切ったキドニービーンズ1パック、クミン小さじ1、カイエンペッパー小さじ1/2</strong>を加えてトマトを潰しながらかき混ぜ、強火で沸騰させる。</p>

<p>5. 沸騰したら中弱火に落として20分コトコト煮る。</p>

<p>6. 仕上げに強火にかけて一気に煮詰める。ヘラ等で線を引いて道が出来るくらいまで煮詰めたら完成！<br />

<p>今回のカレーは蒸し暑い日に特におすすめのトマトが効いたサラサラタイプ。<br />
にんにくのパンチに、クミンと黒胡椒を効かせた爽やかスパイシーな南インド風のカレーです。</p>

<p><strong>煮込む時間はたったの10分。</strong><br />
挽き肉は味が出やすいので短時間でもコクのあるカレーに仕上がります。<br />
切りものも少なく、本当に手軽に作ることが出来るのでぜひ試してみてください。</p>

<p>・ご飯　　　　　　好みの量<br />
・鶏挽き肉　　　　200g<br />
・トマトホール缶　200g<br />
・にんにく　　　　中2かけ<br />
・ししとう　　　　3~4本<br />
・塩　　　　　　　小さじ1<br />
・水　　　　　　　200cc</p>
<p>【パウダースパイス】</p>
<p>・クミン　　　　小さじ1<br />
・コリアンダー　小さじ1<br />
・胡椒　　　　　小さじ1<br />
・ターメリック　小さじ1/3（あれば）<br />
・ガラムマサラ　小さじ1（あれば）</p>
<p>ターメリックとガラムマサラが無い場合は、その他のスパイスを小さじ1/3ずつ増量して代用してください。</p>

<h2>作り方</h2>
<p>1. <strong>ししとう3~4本</strong>を輪切りに、<strong>にんにく２かけ</strong>はあらみじん切りにする。</p>

<p>5. 10分煮たらししとうを加えて30秒〜1分さっと煮る。<br />
火を止めて味見をし、塩や好みのスパイスを加えて好みの味に整える。</p>

今回は<strong>市販のルーを使って作る、私の考える最高のカレーライス</strong>をご紹介したいと思います。</p>
<p>よく市販のルーは説明通りに作るのが1番旨いなんて言いますが、はっきり言います。</p>
<p><strong><span style="font-size: 20px;">絶対このカレーの方が旨い。</span></strong></p>
<p>その上可能な限り手間を省いているので、全工程合わせて<strong>30分で出来ます</strong>。</p>

<h2>美味しいカレーとは？</h2>
<p>作り方をご紹介する前に、美味しいカレーの条件について整理します。<br />
もちろん人それぞれ好みがありますから、ここではあくまで私の思う美味しいカレーについてお話しします。</p>
<p>美味しいカレーの条件、それはこの4つだ！</p>
<h3>スパイシーである</h3>
<p>ここで言うスパイシーとは決して辛いという意味ではなく、<br />
<strong>スパイスの香り、味わいが際立ちながらも調和している</strong>事を指しています。<br />
市販のカレーはメーカーが完璧なスパイスの配合をしているはずだ！という意見もありますが、<br />
先述の通り好みは人それぞれ。<br />
<strong>胡椒や唐辛子などの身近なスパイスやガラムマサラを使って調味する</strong>のも楽しいですよ。<br />
こうするとお子さんに合わせて甘口のルーをお使いの家庭でも、皆好みで調整できるのも嬉しいポイントです。</p>

<h3>うまみが強い</h3>
<p>カレーは実はルーを溶かす前に勝負はついています。<br />
単なる水に溶かしただけのカレーよりも、<strong>うまみのしっかりと出たスープ</strong>で作ったカレーの方が旨いに決まっています。<br />
あれこれと隠し味を加えても、どうも物足りない味になってしまった経験はありませんか？<br />
それは恐らくうまみが足りていないから。</p>
<p>うまみの強いカレーを作るために、私はグルタミン酸の豊富な<strong>トマト</strong>を加え、肉のイノシン酸との「<strong>うまみの相乗効果</strong>」を利用します。<br />
ただしトマトカレーになってしまわないよう、トマトが前面に出ない程度の量（4人前で200gが目安）にとどめるのもポイントです。</p>

<h3>野菜の甘味が溶け出している</h3>
<p>スパイスの香味とうまみに加え、所謂コクを感じさせるためには優しい甘味が効果的です。<br />
はちみつやリンゴを加えるレシピもありますが、私は野菜の控えめな甘味が丁度良いと思います。<br />
この野菜の甘味を加えるためには<strong>玉ねぎを多めに入れる</strong>こと。<strong><br />
</strong>そして、出来れば水でなく野菜の皮やへたなどを煮出した<strong>野菜だし</strong>を使うのがおすすめです。<br />
また、玉ねぎはあくまで甘味を加える役割。<br />
飴色に炒めて香味を引き出すのではなく、電子レンジで加熱するだけでOKです。</p>
<div class="information-box common-icon-box">野菜の皮やへたは捨てずにジップロックに入れて冷凍しておくとカレー以外にも様々な煮込み料理に使えます。</div>
<h3>舌触りなめらか</h3>
<p>これは完全に好みですが、私はカレーに<strong>じゃがいもを入れません</strong>。<br />
なぜなら煮崩れてカレー全体がどろっと、ざらっとしてしまうから。<br />
また、ルーが綺麗に溶けずにダマになってしまうのも舌触りを悪くする要因。<br />
<strong>ルーは必ず火を止めてから加えて溶かす</strong>ことでなめらかなカレーに仕上がります。</p>
<p>以上4点が私のカレーのこだわり。<br />
では、前置きが長くなりましたが作り方をご紹介します。</p>
<h2>材料（4人前）</h2>
<p>・カレールー　　　　　4皿分<br />
・鶏もも肉　　　　　　2枚（500~600g）<br />
・玉ねぎ　　　　　　　大2個<br />
・にんにく　　　　　　中1かけ<br />
・トマトホール缶　　　200g（1/2缶）<br />
・サラダ油　　　　　　大さじ1<br />
・ガラムマサラ　　　　お好み<br />
・胡椒　　　　　　　　お好み<br />
・野菜だし　　　　　　600cc</p>
<p>ルーは個人的には<strong>ジャワカレーの辛口</strong>推しですが、もちろんお好みのものを選んで下さい。</p>

										<content:encoded><![CDATA[<p>海南鶏飯（シンガポールチキンライス）美味しいですよね。</p>
<p>今回は炊飯器にお米と鶏肉を放り込んでスイッチ1つでできるお手軽レシピと、さっとできて本格的な味の3種類のソースをご紹介します。<br />
炊飯器の仕上がりを待つ以外は10分〜15分で準備できるの忙しい時にもおすすめです。</p>
<p>ソースはさっぱりとした<strong>ジンジャーレモンソース</strong>と、ぴりっと辛い<strong>チリソース、</strong>そして現地では”<strong>シーユーダム</strong>”とか”<strong>ダークソイソース</strong>”と呼ばれる甘い醤油ソースを家庭の材料で再現しました。</p>
<p>ちなみに、ちょっと調べたところタイのカオマンガイとの違いは主にこのソースだそうです。<br />
カオマンガイは主にタオチオと言うタイの味噌ベースのソースをつけて食べることが多いんだとか。</p>
<h2>材料（2~3人前）</h2>
<p>・鶏もも肉　2枚（500~600g)<br />
・日本米　2合<br />
・長ネギの青い部分　1本分<br />
・生姜　1かけ<br />
・水　440cc<br />
・塩　小さじ1<br />
・サラダ、ミニトマト等お好みの彩り野菜</p>
<p><strong>ジンジャーレモンソース<br />
</strong>・長ネギ　10cm<br />
・生姜　1かけ<br />
・サラダ油　大さじ1<br />
・レモン　半分<br />
・塩　小さじ半分</p>
<p><strong>チリソース<br />
</strong>・ハリッサ（豆板醤でもOK）大さじ1<br />
・お酢　大さじ1<br />
・ナンプラー　（なければ醤油で代用可）大さじ1<br />
・砂糖　小さじ2</p>
<p><strong>醤油ソース</strong><br />
・濃口醤油　50cc<br />
・砂糖　大さじ1<br />
・水　大さじ1</p>

<p>1. <strong>鶏モモ肉2枚</strong>に<strong>塩小さじ1</strong>を振り、揉み込んで全体になじませる。</p>

<p>2. <strong>米2合</strong>を研ぎ、炊飯器の2合の線まで水を加えて<strong>鶏モモ肉</strong>と、<strong>ネギの青い部分</strong>、<strong>生姜スライスを3〜4枚</strong>加えて通常通り炊飯する。</p>
<p>これで鶏飯の準備は完了！待っている間にソースを準備する。</p>

<p>1. <strong>生姜1かけ</strong>（皮ごとでOK）と<strong>長ネギ10cm</strong>をみじん切りにして、<strong>サラダ油大さじ1</strong>と一緒に小さいフライパン（鍋）に入れる。（まだ火はつけない）</p>

<p>今回はガチ勢から初心者の方にも試していただける様レシピを工夫したので是非ご覧になってください。<br />
最低でもクミン、コリアンダー、ターメリック、カイエンペッパー、胡椒があれば作れます。<br />
また普通のカレーと同じく冷凍で保存がきくので一気にたくさん作るのもオススメです。</p>
<p>では早速レシピの紹介です</p>
<p>と、その前に・・・</p>
<h2>今回のコンセプトとオススメのカレー</h2>
<p>タイトルにもある通り今回は南インド風のカレーです。</p>
<p>インドは国土が広いため北と南でかなり食文化が違います（らしい）<br />
簡単にいうと北は寒いのでバターチキンカレーを代表としたこってりしたカレー。南は暑いのでシャバシャバした辛いカレーが主流です。<br />
他にも色々と特徴があるみたいですが、そこはプロにお任せしてここではざっくりとした説明にとどめておきます。</p>
<p>そんな南インドカレーの名店といえば八重洲や紀尾井町にある<a href="https://www.erickcurry.jp">ERICK SOUTH</a>。<br />
ここは私の大好きなカレー屋さんの1つでそれはもう大きな影響を受けています。<br />
みなさんにも是非通販含めておすすめなのですが、なんとS&amp;Bからレトルトカレーが出ています。</p>

<p>これが旨いのなんの。筆者調べではレトルトカレーの中でもダントツの出来栄えなので是非試してみてください。<br />
スーパーでも結構売ってます。1個約300円という破格のコスパはさすがS＆B。<br />
では前置きが長くなりましたが、ようやくレシピの紹介です。</p>
<h2>材料（4〜５人前）</h2>
<p>・手羽元(*1)  8〜10本<br />
・たまねぎ　2個<br />
・カットトマト缶　1つ（400g）<br />
・ニンニク　大2かけ<br />
・しょうが　1かけ<br />
・塩　小さじ2<br />
・サラダ油　大さじ3<br />
・野菜くず(*2)</p>
<p><strong>必須スパイス群</strong></p>
<p>・クミンパウダー　小さじ3（ホールスパイス群がない場合は小さじ4）<br />
・コリアンダーパウダー　小さじ3 (ホールスパイス群がない場合は小さじ4）<br />
・カイエンペッパー（唐辛子）　小さじ1（辛いのでお好みで調整して下さい）<br />
・黒胡椒　小さじ1<br />
・ターメリック　小さじ1</p>
<p><strong>ホールスパイス群（ガチ勢以外は省略可）</strong></p>
<p>・カルダモン　6〜7粒<br />
・クミンシード　小さじ2<br />
・マスタードシード　小さじ2</p>
<p>*1 手羽元ではなく鶏もも肉でもOK。その場合煮込み時間は短くて済むメリットがありますが、手羽元は骨からも出汁がでるのでおすすめです。</p>
<p>*2 野菜くずは人参の皮や、キャベツの芯、パセリの茎などをジップロック等で冷凍して保存しておいたものです。<br />
水で煮てさっと沸騰させればおいしい出汁が取れます。これを使えばシチューなど他の煮込み料理も1ランク美味しくなるので、普段捨てている人はこれから必ず捨てずに保存しておきましょう。</p>
<p>用意できない方はお水でOKです。</p>

<p>前提：カレーを作る前に、何はともあれご飯を<strong>多め</strong>に炊いてください。</p>
<p>1. 野菜出汁をとる。水800ccに野菜くずをいれ沸騰したら火を止めてザルでこしておく。（省略可）</p>

<p>2. <strong>玉ねぎ2個</strong>をざく切り（適当でOk）にし、シリコンスチーマーにいれ700wの電子レンジで10分チンする。</p>

<p>・シリコンスチーマーがない方は耐熱ボウルや電子レンジ対応のどんぶりなどにラップをして代用してください。<br />
ただ、シリコンスチーマーは超絶便利アイテムなのでこの際購入をおすすめします。</p>
<p>・電子レンジを利用して飴色玉ねぎを時短で作ります。</p>

実はお家で意外に、しかも10分〜15分で簡単にできちゃいます。</p>
<p>栄養バランスも抜群でぜひ覚えておきたいメニューです。超おすすめです。</p>
<h2>その前にそもそもガパオって？</h2>
<p>これ鶏肉と野菜の炒め物でしょ？って思った人いると思います。<br />
あながち間違いではないですが、実はガパオとは「<strong>ホーリーバジル</strong>」を指すタイ語。<br />
つまり、ホーリーバジルが入っていないとガパオとは呼べないんですね。</p>

<p>また、本場では鶏肉だけでなく豚肉やピータンなど様々な具材をガパオと一緒に炒めて食べるしいです。</p>
<p>ホーリーバジルが手に入れば理想的なのですが、スーパーで売っているのをみたことがないので、手に入りやすいスイートバジル（普通のバジル）で代用し作ります<br />
その他にもコブミカンの葉っぱとか、生の唐辛子とか入手ハードル高めの材料は泣く泣く省いています。</p>
<p>なので今回作るのは正確にはガパオ（風）。</p>
<p>ちなみにホーリーバジルはバジルよりももう少し野菜っぽい感じ。香りはバジルとミントの中間なんて言われたりします。</p>
<h2>材料（２人前）</h2>
<p>・ご飯　　　　　　　好きなだけ<br />
・鶏ひき肉　　　　　300g<br />
・バジル　　　　　　2パック<br />
・パプリカ　　　　　1/2個<br />
・ピーマン　　　　　2個<br />
・玉ねぎ　　　　　　半分<br />
・にんにく　　　　　1かけ<br />
・鷹の爪　　　　　　1つ<br />
・オイスターソース　大さじ1<br />
・醤油　　　　　　　大さじ1<br />
・ナンプラー　　　　大さじ1<br />
・砂糖　　　　　　　小さじ1<br />
・サラダ油　　　　　小さじ2<br />
・たまご　　　　　　2個</p>
<p>お肉は豚挽肉でも、鶏もも肉や豚肉を1cmくらいの角切りにしても美味しく出来ます。<br />
ピーマンとパプリカはどちらかだけでもOKですが、赤が入ると見映えします。<br />
バジルは1人前1パックが目安。思っているよりも沢山入れましょう。<br />
ナンプラーがない場合は、醤油を大さじ2に増やして下さい。</p>

<p>1. 野菜は1cmくらいの角切りに。ニンニク1かけはみじん切りにしておく。バジルは水洗いして、手で茎から葉をはずしておく。</p>

<p>6. 写真の様に鶏肉に少し火が通ってきたくらいで<strong>玉ねぎ、ピーマン、パプリカ</strong>を加え、火を<strong>強火</strong>にして炒める。</p>
