										<content:encoded><![CDATA[<p>シチリアのトラパニという地域の伝統料理<strong>トラパネーゼ</strong>をご紹介します。</p>
<p>トラパネーゼとは<strong>トマトとバジル、アーモンドを使ったソースで、トマトのうまみと酸味にバジルのフレッシュな香り、アーモンドのコクがマッチした爽やかで濃厚な味わい。</strong></p>
<p>ソースは火を使わずに作ることができるので、暑い夏の日にもピッタリです。</p>
<p>今回はスパゲッティに合わせますが、現地ではブジアーテという渦上の手打ちパスタで食べられることが多いようです。<br />
他にもパンに塗ったり、野菜や魚のフライやサラダやカルパッチョに合わせたり、何でも合う超万能ソースです。</p>
<p>ベジタリアンやビーガンの方にもおすすめです。<br />

<li>EXVオリーブオイル　大さじ2</li>
<li>塩　　　　　　　　　小さじ1/3</li>
<li>スパゲッティ　　　　180g</li>

<p>ミニトマトはアイコ等の美味しいものを選ぶのがおすすめです。<br />
EXVオリーブオイルも同じく美味しいものを選んでください。</p>

<p>1.　スパゲッティを茹でる。<br />
湯には<strong>味噌汁より少し塩っぱいくらいの塩</strong>を加え、優しく湧く火加減をキープしながら表記時間通りに茹で上げる。</p>

<p>2.茹でている間にソースを作る。<br />
飾り用にミニトマト1人前につき1個を小さくカットする。バジルの葉、スライスアーモンドも少量取り分けておく。</p>

<p>4. ペーストにバジルの葉を加えてヘラなどで馴染ませてから再度撹拌したらトラパネーゼの完成。</p>

<p>アボカドは皮がやや黒っぽく、指で軽く押すと柔らかくなっているものが熟している証。<br />
熟していないものはこの料理には向いていないので、室温で2~3日置いて追熟させて使いましょう。</p>

今回は中華の青菜炒めをイメージした、少しにんにくを効かせた味付けでお酒もご飯も進む仕立てでご紹介します。</p>
<p>短時間でさっとできるのでもう1品欲しい時にも便利ですよ。</p>
<h2>材料（2~3人前）</h2>
<p>・芹　　　　　1束<br />
・にんにく　　中サイズ1かけ<br />
・サラダ油　　大さじ1<br />
・醤油　　　　小さじ2<br />
・ラー油　　　お好み</p>
<p>辛いものが苦手な方はラー油を入れなくても構いません。<br />
また、にんにくはチューブで代用してもOKです。</p>

<p>2. 芹はよく洗って3~4cmの長さに切る。根っこも美味しいのでぜひ一緒に！</p>

<p>4. にんにくの香りがたってきたら芹を加えて中弱火のまま炒める。</p>

<p>そんな悩みとは今日でおさらば。<br />
なぜなら<span class="fz-18px bold blue"><strong>野菜は焼くだけでめちゃめちゃ美味しい</strong></span>のです。</p>
<p>焼く野菜は何でもOK！<br />
特に旬の野菜がおすすめですが、もちろん冷蔵庫に余っている常備野菜でも良いです。</p>
<p>野菜を美味しく焼くことができれば、余った野菜はもちろん使い所の浮かばない野菜たちも楽しむことが出来るのが最大の利点。</p>
<p>大事なのは炒め物のように動かしたりせず、<strong>中火から弱火でじっくりと焼いて焼き目をつける</strong>こと。<br />
味付けは醤油やポン酢、お好みのドレッシングなど何でも良いのですが、おすすめは<strong>美味しい粗塩と美味しいオリーブオイル</strong>。</p>

<p>1. 野菜を大ぶりにカットする。</p>
<p>2. オリーブオイルを少量ひいたフライパンに並べて<strong>中火</strong>にかける。</p>

<p><strong>ししとうによく似たパドロンという甘味の強い青唐辛子をオリーブオイルで素揚げにし、粗塩を振ったシンプルな料理</strong>ですがこれがまたビールやカヴァにあうこと！</p>
<p>スペインの人々にとって、日本人でいう枝豆みたいな最強ポジションのおつまみ。</p>
<p>1本食べる毎にビールをぐびっ。想像するだけでたまりません。</p>
<p>今回はそんなピミエントスデパドロンを家庭で作りやすい様に、ししとうを揚げ焼きして作るレシピをご紹介します。<br />
嬉しいことに包丁すら使わずに5分でできます。</p>
<h2>材料（1~2人前）</h2>
<p>・ししとう　　　　　　1パック<br />
・EXVオリーブオイル　小さじ2<br />
・塩　　　　　　　　　小さじ 1/3</p>
<p>塩は出来れば天然の粗塩を使って下さい。</p>

<p>5分</p>

<p>1. フライパンに<strong>オリーブオイルを小さじ2</strong>、<strong>ししとう</strong>を加えて<strong>中弱火</strong>にかける。</p>

<p>2. オイルを絡めたら<strong>動かさずに3分ほどじっくりと焼いて</strong>裏面に焼き色が付いたらひっくり返す。</p>

シンプルが故に奥が深く、いまいちコクがなかったり、酸味が立ち過ぎてしまったりといった経験がある人も多いはず。</p>
<p>今回はトマト缶を使って<strong>絶対に美味しく作れるトマトソースの秘訣</strong>と、それをあわせた基本のパスタをご紹介します。</p>
<p>仕上げのチーズはお好みですが、チーズなしであればベジタリアンやビーガンの方にもおすすめです。</p>
<p>それでは早速いきましょう。</p>
<h2>材料（１人前）</h2>
<p>・スパゲティ　　100g<br />
・トマト缶　　　半分（200g）<br />
・にんにく　　　1かけ<br />
・バジル　　　　2〜3枚<br />
・エクストラバージンオリーブオイル　大さじ1,小さじ1<br />
・パルミジャーノレッジャーノ　お好み<br />
・塩　　　　　　小さじ1/3<br />
・砂糖　　　　　小さじ1/3</p>
<p>材料が少ないため<strong>それぞれのクオリティ</strong>はとても大事です。</p>
<p>トマト缶は<strong>サンマルツァーノ</strong>や<strong>ダッテリーニ</strong>という品種のものがおすすめです。<br />
特に表記がない場合は<strong>細長いトマトの絵</strong>が記載してあるものが、比較的煮込みに向いていておすすめです。<br />
ホールトマトでもカットトマトでもどちらでもOK。<br />
ただし、個体差が大きく酸味の強いものもあるので、その場合は<strong>砂糖をほんの少し</strong>加えて味を整えます。</p>
<p>また塩、オリーブオイル、スパゲティも上質なものを使えばグッとレベルが上がります。</p>
<p>おすすめのものは下にまとめて記載しておきますね。</p>

<p>ちょっとニュアンスは変わりますが、ねり胡麻はごま油で、すり胡麻は炒り胡麻で代用頂いても構いません。</p>

										<content:encoded><![CDATA[<p>大豆の甘味と香りが引き立つ<strong>最高の湯豆腐</strong>のレシピをご紹介します。</p>
<p>湯豆腐は単なる温かい豆腐ではありません。<br />
シンプルな料理ですが、炒飯やかけそば等と同じ様に丁寧に作ると本当に美味しいくなります。</p>
<p>私の考える最高の湯豆腐とは、<strong>大豆の味が濃い絹ごし豆腐を同じく濃いめの昆布出汁で優しく温め、醤油とごまだれで頂く</strong>もの。<br />
薬味もたっぷりと用意して味変を楽しむのがおすすめ。<br />
今回は、鰹節、青ネギ、揚げ玉、七味唐辛子を用意しましたが、他にもおろし生姜やラー油、柚子胡椒などもおすすめです。</p>
<p>ポイントになるのは<strong>温度</strong>！昆布出汁も、豆腐も沸騰させてはいけません。<br />
昆布は沸騰させると雑味やぬめりが出てしまいますし、豆腐も70〜80度くらいが最も甘味、香りを感じられる温度になります。</p>
<p>併せて簡単にできる自家製のごまだれもご紹介します。ぜひ試してみてください。</p>
<h2>材料（1〜2人前）</h2>
<p>・絹ごし豆腐　1丁（350g）<br />
・昆布　　　　10cm×10cm（約10g）<br />
・菜の花　　　3束<br />
・酒　　　　　50cc<br />
・水　　　　　600cc<br />
・塩　　　　　小さじ1/3</p>
<p><strong>ごまだれ</strong><br />
・練りごま　　大さじ2<br />
・醤油　　　　大さじ2<br />
・ごま油　　　大さじ1<br />
・砂糖　　　　小さじ1</p>
<p><strong>薬味</strong><br />
・青ネギ　　　3本<br />
・鰹節　　　　1パック or 1つかみ（5g）<br />
・揚げ玉　　　大さじ2（10g）<br />
・七味唐辛子　適量</p>
<p>豆腐はぜひちょっと良いものを選んでください。<br />
絹ごしか木綿かは好みですが、<strong>大豆の味が濃いもの</strong>をおすすめします。<br />
また、菜の花は長ネギや、春菊、せりなど他の野菜でも代用可能です。</p>
<p>昆布はお手頃なもので構いませんので、ケチらずに多めに使ってください。</p>
<p>薬味はお好みのものを好きなだけご用意ください。<br />
※ベジタリアンやビーガンの方は鰹節を省いてください。</p>

<p>1.　鍋に<strong>昆布10cm×10cm</strong>と<strong>水600cc</strong>を加えて10分漬けておく。</p>

<p>4. <strong>菜の花３束</strong>を4〜5cmにざく切りにする。</p>

<p>5. <strong>豆腐1丁</strong>を大きめ（８等分位）にカットする。</p>

<p>6. 昆布と水を<strong>弱火</strong>にかけて温める。<br />
<strong>鍋底に小さい気泡が出てきたら（沸騰前）に昆布を取り出し</strong>、<strong>酒50cc</strong>と<strong>塩小さじ1/3</strong>を加える。</p>

・ぬめり、雑味がでないように沸騰前に昆布は取り出して、多めの酒と少量の塩を加えて豆腐の甘味を引き立てる。</div>
