<p>パエリアと言えば魚介のパエリアや、当サイトでも紹介した鶏肉のバレンシア風パエリアがメジャーだと思いますが、現地ではイカスミのパエリアも黒い米を意味する「<strong>アロスネグロ</strong>」と呼ばれ、定番として親しまれています。</p>
<p>ハードルが高い様に思うかもしれませんが、実は市販のイカスミペーストを使えば必要な材料も比較的少なく手軽に作る事ができます。</p>

<p>このイカスミペーストは味はもちろん、1回分に小分けされていてとても使いやすいのでおすすめ。<br />
輸入食材を扱うKALDIや成城石井で、もしくは大きめのスーパーで手に入るかと思います。（Amazonよりも安いです）</p>
<p>また、本来は魚介のスープを使って米を炊き上げるのですが、家庭では現実的でないので代わりにアンチョビを使ってうまみをプラスして手軽に出来るようアレンジしています。</p>
<p>とにかく本当に美味しいので騙されたと思ってぜひ試してください！</p>

<p>・米　　　　　　　　　1合<br />
・イカ　　　　　　　　100g<br />
・玉ねぎ　　　　　　　1/4個<br />
・にんにく　　　　　　大サイズ1かけ<br />
・赤パプリカ　　　　　1/4個<br />
・イタリアンパセリ　　4~5本<br />
・トマト缶　　　　　　100g<br />
・アンチョビフィレ　　2枚<br />
・パプリカパウダー　　小さじ2<br />
・イカスミペースト　　4g（上記商品1パック）<br />
・EXVオリーブオイル　大さじ2<br />
・塩　　　　　　　　　小さじ1/2<br />
・水　　　　　　　　　350cc</p>
<p>イカは今回モンゴウイカを使いましたが種類はなんでもOKです。<br />
手軽な切り身になっているものや、刺身用の物がオススメ。<br />
アンチョビは便利なチューブタイプのものでもOK！<br />
パプリカパウダーは無くても構いません。（より本格的な仕上がりを目指す方はぜひ！）</p>

<p>3. <strong>パプリカ1/4個</strong>と<strong>イカ100g</strong>は1cm角にカットする。</p>

<p>4. 底が平たい大きめのフライパンに<strong>EXVオリーブオイル大さじ1</strong>をひいて、<strong>中弱火</strong>でイカとパプリカを炒める。この時<strong>塩をほんのひとつまみ</strong>（分量外）ふって下味をつける。<br />
イカに火が通って透明感がなくなったら火を止めて一度取り出す。</p>

<p>5. 同じフライパンに再度、<strong>EXVオリーブオイル大さじ1</strong>と<strong>にんにく</strong>を加えて火を止めたまま余熱で香りを引き出す。</p>

<p>7. 2分ほどゆっくりと炒めて玉ねぎの透明感がなくなってきたら、<strong>トマト缶1/4（100g）とイカスミペースト1パック、パプリカパウダー小さじ2</strong>を加えて軽く馴染ませたら、<strong>水350cc</strong>、<strong>塩小さじ1/2</strong>を加えて沸騰させる。</p>

<p>8. 沸騰したら<strong>米1合</strong>を研がずに加えて優しく平らにならし、蓋をせずにそのまま<strong>13分中弱火</strong>で炊く。</p>

<p>9. 13分後には画像のように米がスープを吸って顔を出しているはず。<br />

<p><strong>ししとうによく似たパドロンという甘味の強い青唐辛子をオリーブオイルで素揚げにし、粗塩を振ったシンプルな料理</strong>ですがこれがまたビールやカヴァにあうこと！</p>
<p>スペインの人々にとって、日本人でいう枝豆みたいな最強ポジションのおつまみ。</p>
<p>1本食べる毎にビールをぐびっ。想像するだけでたまりません。</p>
<p>今回はそんなピミエントスデパドロンを家庭で作りやすい様に、ししとうを揚げ焼きして作るレシピをご紹介します。<br />
嬉しいことに包丁すら使わずに5分でできます。</p>
<h2>材料（1~2人前）</h2>
<p>・ししとう　　　　　　1パック<br />
・EXVオリーブオイル　小さじ2<br />
・塩　　　　　　　　　小さじ 1/3</p>
<p>塩は出来れば天然の粗塩を使って下さい。</p>

<p>5分</p>
<h2>作り方</h2>
<p>1. フライパンに<strong>オリーブオイルを小さじ2</strong>、<strong>ししとう</strong>を加えて<strong>中弱火</strong>にかける。</p>

<p>2. オイルを絡めたら<strong>動かさずに3分ほどじっくりと焼いて</strong>裏面に焼き色が付いたらひっくり返す。</p>

・菜の花　　　　　　　1/2パック<br />
・にんにく　　　　　　中サイズ1かけ<br />
・玉ねぎ　　　　　　　中サイズ1/4個<br />
・トマト缶　　　　　　大さじ2<br />
・パプリカパウダー　　小さじ1<br />
・ターメリック　　　　小さじ1/3（あれば）<br />
・塩　　　　　　　　　小さじ1/2<br />
・EXVオリーブオイル　大さじ2<br />
・水　　　　　　　　　450cc</p>
<p><strong>玉ねぎとトマトは入れすぎない</strong>のがポイントです。<br />
<strong>パプリカパウダー</strong>はあまり馴染みがないかもしれませんが、<strong>パエリアには必須</strong>です。<br />
味は香りとうまみが強い代わりに辛くない唐辛子といった感じ。<br />
この<strong>ピメントン</strong>というスペイン産のスモークされたものは風味も段違いなので、スペイン料理をお好きな方はぜひ。<br />
もちろん、スーパーで売っているS&amp;Bなどのものでも大丈夫ですよ。</p>

<p>また、通常パエリアはサフランで色付けをしますが、非常に高価なので今回はターメリックパウダーで代用をしています。<br />
味にはほとんど影響しないのでなくても構いません。</p>

<h2>パエリアを美味しく作るポイント</h2>
<p>パエリアを美味しく作る方法は、我々日本人が常識としている米の炊き方と全く異なります。<br />
もちろん人それぞれの好みですが、私の考える美味しいパエリアはベチャッとせずに米の粒が立っていて、スープの味をしっかり吸い込んだもの。香ばしいお焦げも大事ですね。<br />
これを実現するためには、以下の<strong>4つのポイント</strong>が大切です。</p>
<h4>米は研がない</h4>
<p>米は研ぐ際にたくさんの水を吸収します。<br />
パエリアは水でなくスープを吸わせて炊き上げる料理。出来るだけ多くのスープを吸わせるために洗わずに乾いたまま米を加えましょう。</p>
<h4>米を炒めない</h4>
<p>米を炒めるパエリアのレシピを度々見かけますが、私は米を炒めるのはナシだと思っています。<br />
米は炒めるとひび割れてしまい、必要以上にでんぷん質がスープに溶け出しベチャッとした仕上がりになってしまいます。</p>
<h4>米を混ぜない</h4>
<p>これも炒めないと同じ理由です。<br />
なるべく米を傷つけないよう、米を加えたら出来るだけ触らないのがポイントです。</p>
<h4>蓋をしない</h4>
<p>米を炊くのに蓋をしない？と疑問に思う方もいらっしゃると思います。<br />
確かに蓋をして炊くとふっくらと炊きあがりますが、蓋をせずに炊く米が粒だったアルデンテの食感を作りやすいんです。</p>
<p>以上のポイントを踏まえて（ようやく）あさりと菜の花のパエリアを作っていきます。</p>
<h2>作り方</h2>
<p>1.<strong>にんにく1かけ、玉ねぎ1/4個</strong>をあらみじん切りにする。</p>

<p>2. <strong>菜の花1/2パック</strong>を7mm位の小口切りにする。この時<strong>茎の部分は分けておく</strong>。</p>

<p>3. 大きめのフライパンに<strong>EXVオリーブオイル大さじ2</strong>と<strong>にんにく</strong>を加えて<strong>中弱火</strong>にかける。</p>

<p>4. にんにくの香りが立ってきたら<strong>玉ねぎ</strong>を加えて炒める。</p>

<p>5. 玉ねぎがしんなりしてきたら、<strong>トマト缶大さじ2</strong>を加えてトマトを潰しながら中弱火で炒める。</p>

<p>6. 1~2分炒めたら、<strong>パプリカパウダー小さじ1</strong>、<strong>ターメリック小さじ1/3</strong>を加え混ぜ合わせる。<br />

<p>7. <strong>あさり200g</strong>と<strong>水450cc</strong> を加え、<strong>強火</strong>にしあさりの口を開かせる。</p>

<p>8. あさりが開いたら火を止めて、<strong>あさりを一度取り出す</strong>。<br />
スープの味見をして、この時点で丁度良い<strong>塩加減</strong>に調整する。</p>

										<content:encoded><![CDATA[<p>家庭で手軽に作ることのできる<strong>ロメスコソース（salsa romesco）</strong>のレシピと、ロメスコソースと相性の良い<strong>豚肉と長ネギのグリル</strong>をご紹介します。</p>
<p>ロメスコソースは、スペインのカタルーニャ地方発祥の<strong>赤パプリカとナッツ</strong>のソースで、現地では<strong>カルソッツ</strong>という長ネギを真っ黒になるまで焼いてとろとろになった中身をつけて食べるのが定番。他にも肉や魚にもあう非常に万能なソースです。</p>
<p>日本での知名度はあまり高くないと思いますが、これが驚くほど美味しいんです。</p>
<p>本来はパプリカ、ニンニク、トマトを丸ごとローストして作りますが、電子レンジを活用すれば簡単に作ることができます。</p>
<h2>材料（２人前）</h2>
<p><strong>ロメスコソース</strong><br />
・赤パプリカ　半分<br />
・ニンニク　1かけ<br />
・トマト缶　大さじ2<br />
※フレッシュトマトを使う場合は1/4個<br />
・アーモンド（無塩）　12〜15粒<br />
※代わりにくるみや松の実もOK<br />
・塩　小さじ1/2<br />
・エクストラバージンオリーブオイル　大さじ2</p>
<p><strong>グリル</strong><br />
・豚ロースとんかつ用　2枚（130g×2枚）<br />
・長ネギ　2本<br />
・塩　　小さじ1/3<br />
・胡椒　適量</p>

<h2>美味しく作るポイント</h2>
<p>・ロメスコソースは分量の比率を守る<br />
・豚肉は焼く30分前に冷蔵庫から出しておく<br />
・豚肉は立てて脂身からカリッと焼く<br />
・お肉は盛り付けた際に上にくる面から押さえつけながら焼く<br />
・ネギはしっかりと焼き目が付いてやわらかくなるまで焼く</p>

</strong>・事前に豚肉は冷蔵庫から出しておきましょう</p>

<p>1. <strong>パプリカ半分</strong>のヘタと種を取り除いてざく切りに<strong>。</strong>皮を剥いた<strong>ニンニク1かけと</strong>一緒にシリコンスチーマーに入れ、蓋をしてレンジで<strong>700w 2分</strong>加熱する。</p>
<p>※シリコンスチーマーがない方は耐熱ボウルなどにいれて、ラップで蓋をして代用してください。</p>

<p>2.  アーモンド12~15粒を小さいフライパンで<strong>弱火</strong>にかけていい香りがたってくるまで乾煎りする。（面倒であれば省略可）<br />
※あくまで香りを立たせるだけで焦げ目はつけない。</p>

<p>3. チンした<strong>パプリカとニンニク</strong>、<strong>アーモンド</strong>をボウルやブレンダーカップに入れ、<strong>トマト缶大さじ2（フレッシュトマトの場合は1/4個）、塩小さじ1/2、オリーブオイル大さじ2</strong>を加えてブレンダーで撹拌する。</p>

意外に簡単でしょう？これができればもう今日は勝利確定です。</p>

<p>4. <strong>長ネギ</strong>を<strong>4~5等分くらいの長さにカット</strong>する。（大きさは仕上がり写真参照）</p>
<p>5. <strong>豚肉</strong>に<strong>重量の0.8~1％の重さの塩</strong>をふる。今回はソースに塩気があるので、気持ち薄めの0.8%にしましょう。<br />
私が使ったお肉の場合は、<strong>1枚約130gなので1g（小さじ1/5）</strong>ずつ。</p>

<p>しかし現地ではバレンシア風パエリア（Paella Valenciana）と呼ばれる鶏肉とウサギ肉を使ったパエリアもメジャーでこれがまた美味しいんです。</p>
<p>今日はこのバレンシア風パエリアを手に入りやすい食材を使って少しアレンジしてフライパンで作ります。</p>
<p>そして一緒にこのパエリアによくあうアイオリソースも簡単に作れるレシピでご紹介します。</p>
<p>ステップは多いですが、パエリアを上手に作るポイントを余すことなく書いていますので必見です。</p>

<h2>材料（3〜4人前）</h2>
<p>パエリア</p>
<p>・米　　　1合<br />
・手羽元　4-6本<br />
・玉ねぎ　1/4個<br />
・ニンニク　1かけ<br />
・赤パプリカ　1/4個<br />
・トマト缶　100g（1/4缶）<br />
・ターメリック　小さじ1/3<br />
・パプリカパウダー　小さじ2<br />
・乾燥ローズマリー　小さじ1<br />
・塩　小さじ1<br />
・エクストラバージンオリーブオイル　大さじ1<br />
・水　500cc</p>
<p>通常はサフランを使って色付けをしますが、非常に高価なので邪道ですがターメリックで代用します。<br />
また、モロッコインゲンや一般的なインゲンを加えるとより彩りが良くなるのでオススメです。（なかった）<br />
ローズマリーはフレッシュなものがあれば尚良いです。</p>

<p>・マヨネーズ　大さじ3<br />
・ニンニクすりおろし　小さじ1/4<br />
・パセリ　みじん切り　小さじ1</p>

<p>・<strong>底が平でなるべく大きい</strong>テフロン加工か鉄製のフライパンを使う（26cm以上推奨）<br />
・野菜はお米になじむ様小さめにカットする<br />
・手羽元を<strong>カリッと香ばしい焼き目</strong>がつくように焼くこと<br />
・お米を入れる前に<strong>焼いた手羽元を少し煮込んで美味しいスープ</strong>を取る<br />
・<strong>お米は洗わない、炒めない、混ぜない！</strong><br />
・<strong>パプリカパウダー</strong>を絶対に入れる<br />
・最後の蒸らし以外は<strong>蓋をしないで炊く</strong><br />
・<strong>最後に強火</strong>にかけておこげを作る</p>

<p>1. <strong>ニンニク1かけ</strong>、<strong>玉ねぎ1/4</strong>を粗みじん切りに。（雑に大きめでOK）<br />
<strong>パプリカ1/4</strong>はヘタと種を取り除いて、写真のように少し小さめにカットしておく。<br />
インゲンを入れる場合はパプリカと同じくらいのサイズにカットする。</p>

・野菜はお米になじむ様に小さめにカットする。<br />
ただし、玉ねぎニンニクは焦げない様にあえて雑にみじん切りにする。</p>

<p>所謂オープンオムレツスタイルで、ひっくり返す必要がないので比較的簡単に作れます。</p>
<p>スパークリングワインやビールに最高。見た目も映えるのでホームパーティーにもピッタリです。</p>
<h2>材料（1〜２人前）</h2>
<p>・たまご　3個<br />・乾燥桜海老　ひとつかみ（6~7g）<br />・ししとう　1個<br />・パルミジャーノレッジャーノ　5g<br />・レモン　ほんの少し<br />・塩　小さじ1/3<br />・オリーブオイル　小さじ1</p>
<p>パルミジャーノレッジャーノは市販の粉チーズで代用しても構いません。<br />レモンは仕上げに皮を少しすりおろして汁を絞りますが、無ければポッカレモンやお酢を5〜6滴くらい垂らして代用してください。</p>
<p>ししとうの代わりに”<strong>ギンティージャ</strong>”というスペインの青唐辛子の酢漬けを使うとより本格的になります。<br />ただ、なかなか入手ハードルが高いので私はいつもししとう＋レモンで代用します。</p>

<p>3. 小さめのテフロン加工のフライパン* に<strong>オリーブオイル小さじ1</strong>をひいて中火にかける。</p>
<p>*たまご3〜4個であれば20cmくらい。6〜8個であれば24~26cmくらいが最適。<br />　下にオススメを貼っておきます。</p>

										<content:encoded><![CDATA[<p>スペイン料理の定番メイン料理、鶏肉のトマト煮込み（Pollo al Chilindron：ポロアルチリンドロン）を紹介します。</p>



<p>イタリアやフランスでも鶏肉のトマト煮込みはメジャーな家庭料理ですが、スペイン版の特徴はなんといっても<strong>パプリカ</strong>が入ること。</p>



<p>これによって独特の甘みとコクが出て美味しいんです。</p>



<p>これは個人的な見解ですが、イタリアンとスパニッシュは似た料理が多く存在しますが、この境は使用するパプリカとニンニクの量かなと思っていたりします。</p>



<p>お肉は今回は手羽元を使います。<span class="has-inline-color has-black-color"><strong>安い上に骨からも出汁が出る</strong></span>ので煮込みには最適だと思います。</p>



<p>もちろん（骨つき or 骨なし）鶏モモ肉でも大丈夫です。</p>

<p>2. 玉ねぎは皮を剥いて根元を取って2~3mmにスライス。パプリカは半分に割ってタネとヘタを取り除いて同じようにスライスにする。</p>

<p>3. 手羽元に両面小さじ1/2ずつ塩（合わせて小さじ1）と、コショウを少々ふる。</p>

<p>4. 鍋を中火で熱してオリーブオイル大さじ1を加え、手羽元を皮面から焼いていく。<br />※<strong>この時あまり動かさずにパリッと香ばしく焼くことが最大のポイント。</strong></p>

<p>5. 同じ鍋でニンニク、玉ねぎ、パプリカを炒める。塩を小さじ1/4加えて野菜の水分を引き出すように炒める。<br />火加減は中火のままでOK。</p>

<p>カタルーニャ地方の名物料理で、以前訪れたバルセロナではどのバルでも定番として出していました。</p>



<p>日本でいう冷奴みたいな位置付けでしょうか・・・ちょっと違うか。</p>



<p>かくいう私はスペインバルが大好きで、スペインバルに行ったらまずは必ずこれと生ハムを頼んでビールかカヴァを流し込みます。</p>



<p>このレシピは料理好きなスペイン人の友人に教わった最強のレシピです。</p>



<p>クラシックなものは、バゲットにニンニクとトマトの断面をこすりつけて作りますが、このレシピは一味ちがいます。</p>



<p>むっちゃ簡単にできますが、ビールやワインが進みすぎて危険です。是非試してみてください。</p>

<p>・トマト　中1個<br>・塩　小さじ1/4<br>・エクストラバージンオリーブオイル　小さじ1<br>・ニンニク　1/4かけ<br>・バゲット　半分</p>
