<p>冬瓜は下茹でをすることが多いのですが、レンジを使えば時短できますし味も染みやすくなりますよ。</p>
<h2>材料（2〜3人前）</h2>
<ul>
<li>冬瓜　　　　　　　1/8カット(400g)</li>
<li>出汁　　　　　　　600cc</li>
<li>薄口醤油　　　　　大さじ2</li>
<li>みりん　　　　　　大さじ2</li>
<li>鶏そぼろ　　　　　200g</li>
<li>水溶き片栗粉　　　大さじ1の片栗粉を同量の水で溶く</li>
<li>柚子等の柑橘の皮（あれば）　少量</li>
</ul>
<p>出汁は出汁パックや顆粒の出汁で準備してもOK。<br />
顆粒出汁を使う場合は600ccに対して小さじ1くらいの薄めがおすすめ。</p>
<p>柑橘の皮は仕上げのアクセントに使いますがあればでOK。代わりに柚子胡椒を少量乗せても美味しい。</p>

<li>冬瓜の皮をピーラーで剥き、中心のワタと種をスプーンで取り除き<strong>3~4cm角の大きめ</strong>に切って耐熱容器に入れ、ラップなどで蓋をして<strong>700wの電子レンジで5分</strong>加熱する。<br />

<li>一度火を止めて、<strong>鶏そぼろ200g</strong>（大きめのお玉で3杯分程度）と<strong>水溶き片栗粉</strong>をよく溶いて加え、混ぜ合わせてから再度中火にかけて2分煮込む。<br />

<li>豚こま肉　　　300g</li>
<li>茄子　　　　　3~5本</li>
<li>ピーマン　　　5個</li>
<li>にんにく　　　1かけ</li>
<li>生姜　　　　　1かけ</li>
<li>味噌　　　　　大さじ2</li>
<li>みりん　　　　大さじ2</li>
<li>酒　　　　　　大さじ2</li>
<li>ごま油　　　　大さじ1</li>
</ul>
<p>豚こま肉はバラ肉やロース肉でも代用可能。<br />
にんにく、生姜はチューブのもの1cm分でも代用可能。</p>

<li>茄子はピーラーで縞模様に皮を剥き、ラップで包んで<strong>700wの電子レンジで3分</strong>加熱する。

										<content:encoded><![CDATA[<p>シチリアのトラパニという地域の伝統料理<strong>トラパネーゼ</strong>をご紹介します。</p>
<p>トラパネーゼとは<strong>トマトとバジル、アーモンドを使ったソースで、トマトのうまみと酸味にバジルのフレッシュな香り、アーモンドのコクがマッチした爽やかで濃厚な味わい。</strong></p>
<p>ソースは火を使わずに作ることができるので、暑い夏の日にもピッタリです。</p>
<p>今回はスパゲッティに合わせますが、現地ではブジアーテという渦上の手打ちパスタで食べられることが多いようです。<br />
他にもパンに塗ったり、野菜や魚のフライやサラダやカルパッチョに合わせたり、何でも合う超万能ソースです。</p>
<p>ベジタリアンやビーガンの方にもおすすめです。<br />

<p>ミニトマトはアイコ等の美味しいものを選ぶのがおすすめです。<br />
EXVオリーブオイルも同じく美味しいものを選んでください。</p>

<p>1.　スパゲッティを茹でる。<br />
湯には<strong>味噌汁より少し塩っぱいくらいの塩</strong>を加え、優しく湧く火加減をキープしながら表記時間通りに茹で上げる。</p>

飾り用にミニトマト1人前につき1個を小さくカットする。バジルの葉、スライスアーモンドも少量取り分けておく。</p>

<p>ビビンバといえば数種類のナムルを作る手間のかかる料理かと思われがちですが、今回は甘辛く炒めたお肉とサラダをあわせるだけの簡単仕上げ。</p>
<p>簡単なだけでなくこれが驚く程美味しいんです。<br />
野菜もたっぷりとれて栄養満点！ぜひお試しください。</p>

<li>ご飯　　　　　300g</li>
<li>豚ひき肉　　　200g</li>
<li>フリルレタス　1/2玉</li>
<li>せり　　　　　1/2パック</li>
<li>たまご　　　　2個</li>
<li>にんにく　　　1かけ</li>
<li>ごま油　　　　大さじ2</li>
<li>コチュジャン　大さじ2</li>
<li>砂糖　　　　　小さじ1</li>
<li>醤油　　　　　大さじ1</li>
<li>すりごま　　　小さじ1</li>
</ul>
<p><strong>野菜は好みのものや余っているものでアレンジしてください。</strong><br />
今回のフリルレタスとせり以外にも、レタス、グリーンレタス、ベビーリーフ、三つ葉などは特におすすめです。<br />
もちろん茹でた（もしくはレンジで加熱した）もやしや人参もよく合います。</p>
<p>他にも韓国海苔をちぎって散らすのもおすすめです。</p>
<p>コチュジャンは少し辛いので辛いものが苦手な方や、子供用には<strong>味噌で代用してもOK</strong>です。</p>

<p>4. 豚肉の色が変わって来たら<strong>コチュジャン大さじ2、醤油大さじ1、砂糖小さじ1</strong>を加え混ぜながら炒める。<br />
豚肉に火が通ったら火を止めてボウルなどに移しておく。</p>

<p>家庭で作るのはハードルが高いと思われがちですが、今回は<strong>手軽に本格的な味を再現できる出来るレシピ</strong>をご紹介します。</p>
<p>本場重慶の火鍋を参考にしていますが、食材や調味料は基本的にスーパーで手に入る食材を使って作りやすいように少しアレンジしています。</p>
<p>中華の調味料は買い揃えるのにハードルを感じる方もいらっしゃると思いますので、代替品についても触れていきます。</p>
<p>はっきり言って<strong>そんじょそこらの店より美味しい</strong>です。<br />

<h3>＜スープ＞</h3>
<p>・水　　　　　　　　　　　1200cc<br />
・鶏がらスープの素(*1) 　　大さじ1<br />
・豆板醤　　　　　　　　　大さじ1<br />
・豆豉(*2)             　　　　大さじ1<br />
・にんにく　　　　　　　　2かけ<br />
・生姜　　　　　　　　　　2かけ<br />
・鷹の爪　　　　　　　　　お好みの量<br />
・花椒(*3) 　　　　　　　　小さじ1<br />
・五香粉(*4) 　　　　　　　5振り<br />
・サラダ油　　　　　　　　大さじ4<br />
・ラー油　　　　　　　　　お好みの量<br />
・牛脂(*5)　 　　　　　　　2かけ<br />
・醤油　　　　　　　　　　大さじ4</p>
<p>(*1)鶏がらスープは鶏がら1羽分とネギの青い部分をアクを取りながら1時間ほど弱火で煮出すとより本格的に<br />
(*2)豆豉とは黒豆を発酵させた調味料。なければ味噌で代用可能です。<br />
(*3)花椒は日本の山椒で代用可能。量は好みで調整をして下さい。無い場合は入れなくてもOK。<br />
(*4)五香粉は中国のミックススパイス。複雑な香りで一気に本格的な味わいになるので出来れば入れて欲しいですが、、、無くてもOK。ちなみに麻婆豆腐や魯肉飯にも使えます。<br />
(*5)牛脂はスーパーの肉コーナーにあるかと思います。入れることでコッテリとなりますので、お好みで用意してください。無くても少しあっさり美味しく作れます。</p>

										<content:encoded><![CDATA[<p><strong>手羽から出る鶏のうまみをとろとろの冬瓜にたっぷりと吸わせていただく煮込み料理</strong>をご紹介します。</p>
<p>今回はうどんを加えて鍋仕立てにしていますが、もちろん大皿に盛っておかずとしても頂けます。</p>
<p>冬瓜はその名に紛らわされがちですが、実は<strong>夏から秋が旬</strong>の野菜。<br />
夏に収穫して冬まで持つことから冬瓜と呼ばれているそう。</p>
<p>火を入れると大根のようなとろとろの食感に、瓜の独特の清涼感のある香りがなんとも言えず美味しいです。<br />
近頃はスーパーや八百屋でカットしてあるものが売っていますのでぜひ手に入れた際には試してみてください。</p>
<h2>材料（2〜3人前）</h2>
<p>・手羽元　　　　8~10本<br />
・冬瓜　　　　　1/8個（約400g）<br />
・青ねぎ　　　　5本<br />
・にんにく　　　1かけ<br />
・水　　　　　　1200cc<br />
・酒　　　　　　100cc<br />
・塩　　　　　　小さじ2<br />
・うどん　　　　1玉</p>
<p>青ねぎは普通の長ネギでもOK。<br />
にんにくは少しパンチを効かせるために使いますが、好みで生姜に替えても美味しいですよ。</p>
<h2>所要時間</h2>
<p>50分</p>
<p>※煮込む時間はかかりますが手間はほとんどかかりません。</p>
<h2>作り方</h2>
<p>1. 鍋に<strong>手羽元8~10本</strong>と<strong>にんにく1かけ</strong>粗みじん切り、<strong>水1200cc</strong>、<strong>酒100cc</strong>を加えて<strong>強火</strong>にかける。</p>

<p>3. 冬瓜400gはスプーンでワタと種の部分を取り除く。<br />
ピーラーで皮を剥いて、一口大の乱切りにする</p>

<p>5. 手羽を40分煮たら冬瓜と<strong>塩小さじ2</strong>を加え、<strong>さらに10分</strong>煮込む。<br />

<p>6. 計50分煮込んだら手羽元も冬瓜もとろとろになっているはず。<br />
味見をして塩味を整える。水が蒸発して少なすぎる場合や味が濃い場合は水を加えて調整する。</p>

<p><strong>甘いとうもろこしはシャキシャキ感を残して仕上げる事でリゾットのもったり感のコントラストを</strong>。そして、<strong>仕上げにとうもろこしと相性の良いトリュフオイルを加えて香りにアクセント</strong>を出しています。</p>
<p>もちろん、トリュフオイルは無くてもOK。<br />
フレッシュなEXVオリーブオイルかバターで仕上げてもとっても美味しいですよ。</p>
<p>今回、米には日本米を使っています。<br />
<strong>日本米はイタリアの米と違いデリケート</strong>なため、<strong>出来るだけ米を優しく扱って米を傷つけない</strong>事が大事です。</p>

<p>仕上げのトリュフオイルはEXVオリーブオイルかバターで代用可能です。<br />
またチーズは缶のパルメザンチーズでも構いませんが、出来ればブロックのパルミジャーノを使う直前にすりおろして使ってください。<br />
シンプルな料理ほど、材料の質にこだわる事が大切です。</p>

・米にオリーブオイルを絡めてコーティングしアルデンテに<br />
・水分が蒸発しすぎないように小さめの鍋で炊く<br />
・スープは熱々をキープしておく<br />
・炊いている間は決して米に触らない<br />
・できれば美味しいパルミジャーノレッジャーノを直前におろして使う</div>
<h2>作り方</h2>
<p>1. <strong>とうもろこし1/2本</strong>は包丁で芯から身の部分を外す。<br />
この時包丁をのこぎりの様に小刻みに動かしながら切ると良い。</p>

<p>2. とうもろこしの芯は半割にして<strong>水800cc</strong>と<strong>鶏がらスープの素小さじ1/2</strong>と弱火にかけてスープを作る。スープは弱火で熱々をキープしておく。</p>

<p>3. <strong>玉ねぎ1/8個</strong>を細かくみじん切りに。<strong>米50g</strong>を計量しておく。</p>

<p>4. 鍋に<strong>EXVオリーブオイル小さじ2</strong>と<strong>玉ねぎ、塩小さじ1/2</strong>を加えて弱火で炒める。</p>

<p>5. 玉ねぎに少し火が入って透明感が出てきたら火を止めて米を加え、ヘラで優しくオイルを絡める。</p>

<p>6. 米にオイルが絡んだら、スープをザルで濾して<strong>300cc</strong>加えて蓋をせずに<strong>中弱火でまずは8分</strong>炊く。</p>

米に傷がついてデンプンが溶け出し、べちゃっとした仕上がりになってしまうため。</div>

<p>7. 米を炊いている間に<strong>パルミジャーノレッジャーノ15g</strong>をすりおろしておく。</p>

<p>8. 8分炊いたらとうもろこしを加えて<strong>更に5分</strong>炊く。（計13分）<br />
仕上がりの水分量は画像のようにヘラで引いた線が一瞬残る位が目安。<br />
この時点で水分が多すぎる様であれば少し火を強めるか、少ない場合はスープを加えて調整する。</p>

<p>9. 計13分炊いたら火を止めて<strong>パルミジャーノレッジャーノ</strong>と<strong>トリュフオイル大さじ1</strong>を加え、優しくかき混ぜる。</p>
