<p>桜海老は下処理が不要なので忙しいときでもさっと作ることが出来ますよ。</p>

<li>釜揚げ桜海老　　　　40g</li>
<li>にんにく　　　　　　中サイズ1かけ</li>
<li>鷹の爪　　　　　　　1/2本</li>
<li>アンチョビ　　　　　1枚</li>
<li>EXVオリーブオイル　大さじ1</li>
</ul>
<p>桜海老は乾燥のものでもOK。乾燥の場合は1人前で1つかみ（6gほど）が目安。<br />
アンチョビは便利なチューブのものでもOK。<br />
仕上げのオリーブオイルはぜひ香りの良いものを。</p>

<h2>作り方</h2>
<p>1. パスタを茹でる湯を沸かす。茹で汁には味噌汁と同じくらいの塩っぱさになるよう塩を加える。</p>

1Lの湯に小さじ2の塩が目安。</div>
<p>2. 菜の花を3cm程度の長さに切る。茎の太い部分はさらに縦半分にカットしておく。<br />

<li>鯛の切り身　　　　2切れ</li>
<li>薄口醤油　　　　　大さじ1</li>
<li>出汁　　　　　　　400cc</li>
<li>三つ葉　　　　　　4〜5本</li>
<li>柚子等の柑橘の皮（あれば）　少量</li>
</ul>
<p>出汁は出汁パックがおすすめ。<br />
白だしや顆粒の出汁等塩分を含む出汁は少し薄めに希釈し、また炊く前の<strong>塩気がお吸い物と同じくらい</strong>になるように薄口醤油を加減する。</p>

<li>米2合を優しく研いでザルに上げて水を切る。</li>
<li>鍋（炊飯器）に米と出汁、<strong>薄口醤油大さじ1</strong>を加えて炊飯する。

<p>4. 湯を沸かし、鯛の切り身を5秒茹でて冷水に落として冷ましたらすぐにキッチンペーパー等で水気を拭き取る。</p>

<p>冬瓜は下茹でをすることが多いのですが、レンジを使えば時短できますし味も染みやすくなりますよ。</p>
<h2>材料（2〜3人前）</h2>

<li>冬瓜　　　　　　　1/8カット(400g)</li>
<li>出汁　　　　　　　600cc</li>
<li>薄口醤油　　　　　大さじ2</li>
<li>みりん　　　　　　大さじ2</li>
<li>鶏そぼろ　　　　　200g</li>
<li>水溶き片栗粉　　　大さじ1の片栗粉を同量の水で溶く</li>
<li>柚子等の柑橘の皮（あれば）　少量</li>
</ul>
<p>出汁は出汁パックや顆粒の出汁で準備してもOK。<br />
顆粒出汁を使う場合は600ccに対して小さじ1くらいの薄めがおすすめ。</p>
<p>柑橘の皮は仕上げのアクセントに使いますがあればでOK。代わりに柚子胡椒を少量乗せても美味しい。</p>

<li>冬瓜の皮をピーラーで剥き、中心のワタと種をスプーンで取り除き<strong>3~4cm角の大きめ</strong>に切って耐熱容器に入れ、ラップなどで蓋をして<strong>700wの電子レンジで5分</strong>加熱する。<br />

<p>椎茸は他のキノコでも良いですし無くても構いません。<br />
青ネギは長ネギの青い部分や小松菜などの青味で代用可能です。</p>

<p>6. <strong>あまり動かさずに焼き目をつける</strong>ように炒め、片面に香ばしい焼き目がついたら<strong>にんにく、れんこん、椎茸</strong>を加えて全体を混ぜ合わせたら、再びあまり動かさずに焼き目をつけるように炒める。</p>

湯には<strong>味噌汁より少し塩っぱいくらいの塩</strong>を加え、優しく湧く火加減をキープしながら表記時間通りに茹で上げる。</p>

<p>じゃこのうまみに実山椒の爽やかな香りと刺激がなんともたまらなく、ご飯が何杯でも食べられますよね。</p>
<p>実山椒は5月中旬から7月にかけての短い間しか採れませんから、スーパー等で見かけた際にはぜひ手にとってみてください。</p>
<p>私のちりめん山椒は<strong>甘さ控えめのさっぱりとした味付け</strong>。<br />
山椒を少し多めに加えるのもポイントです。</p>
<p>作り方は実に簡単。<br />
少しのコツでとっても美味しいちりめん山椒が出来るのでぜひお試しください。</p>
<h2>材料（作りやすい分量）</h2>

<li>ちりめんじゃこ　　　　70g（2パック）</li>
<li>実山椒（下処理済）　　大さじ2</li>
<li>酒　　　　　　　　　　50cc</li>
<li>薄口醤油　　　　　　　40cc</li>
<li>みりん　　　　　　　　20cc</li>
</ul>
<p>この分量で10人前くらいのちりめん山椒ができます。<br />
冷蔵庫で約1週間、フリーザーバッグ等で冷凍保存をすれば長持ちします。</p>
<p>じゃこはしらす干しでは煮崩れてしまうので、より乾燥したちりめんじゃこを使いましょう。<br />
薄口醤油がない場合は濃口醤油でもOK。<br />

<p>ビビンバといえば数種類のナムルを作る手間のかかる料理かと思われがちですが、今回は甘辛く炒めたお肉とサラダをあわせるだけの簡単仕上げ。</p>
<p>簡単なだけでなくこれが驚く程美味しいんです。<br />
野菜もたっぷりとれて栄養満点！ぜひお試しください。</p>
<h2>材料（2人前）</h2>
<ul>
<li>ご飯　　　　　300g</li>
<li>豚ひき肉　　　200g</li>
<li>フリルレタス　1/2玉</li>
<li>せり　　　　　1/2パック</li>
<li>たまご　　　　2個</li>
<li>にんにく　　　1かけ</li>
<li>ごま油　　　　大さじ2</li>
<li>コチュジャン　大さじ2</li>
<li>砂糖　　　　　小さじ1</li>
<li>醤油　　　　　大さじ1</li>
<li>すりごま　　　小さじ1</li>
</ul>
<p><strong>野菜は好みのものや余っているものでアレンジしてください。</strong><br />
今回のフリルレタスとせり以外にも、レタス、グリーンレタス、ベビーリーフ、三つ葉などは特におすすめです。<br />
もちろん茹でた（もしくはレンジで加熱した）もやしや人参もよく合います。</p>
<p>他にも韓国海苔をちぎって散らすのもおすすめです。</p>
<p>コチュジャンは少し辛いので辛いものが苦手な方や、子供用には<strong>味噌で代用してもOK</strong>です。</p>

<p>1. <strong>フリルレタス1/2個</strong>を1口サイズに手でちぎり、水にさらしてサラダスピナーで水気をきる。</p>

<p>4. 豚肉の色が変わって来たら<strong>コチュジャン大さじ2、醤油大さじ1、砂糖小さじ1</strong>を加え混ぜながら炒める。<br />
豚肉に火が通ったら火を止めてボウルなどに移しておく。</p>

豆の香りと甘みに、ほんのり塩気のきいたご飯。想像しただけでたまりません。</p>
<p>さや付きのエンドウ豆（グリーンピース）を見かけたら必ず買いです。<br />
フレッシュな豆の味、食感、香りは冷凍のそれとは全く別物！<br />
グリーンピースが得意でない人も騙されたと思ってぜひ試してみて欲しいです。</p>
<p>豆ご飯のポイントは<strong>豆のベストな色と食感を楽しむために別茹で</strong>にすること。<br />
そして<strong>さやから出汁を取る</strong>ことで、豆のうまみと香りをご飯に移すこと。</p>
<p>ポイントを抑えて一緒に作っていきましょう。</p>

<p>3. 出汁を取っている間にエンドウ豆を剥く。</p>

<p>4. 出汁にさやを入れ、5分ほど煮てさやの味と香りを出汁に移す。</p>

<p>5. <strong>油揚げ1/2枚</strong>をみじん切りにする。</p>

<p>6. 鍋に米と<strong>出汁200cc、薄口醤油大さじ1、塩1つまみ、刻んだ油揚げ</strong>を加えて炊飯する。<br />
鍋で炊飯する場合は強火にかけ沸騰したら極弱火に落として13分。<br />
炊飯器の場合は通常通りの炊飯でOK！</p>
<div class="information-box common-icon-box">薄口醤油がない場合代わりに米1合につき<strong>塩小さじ1/2</strong>を加える。<br />
濃口醤油は色が強すぎるのでおすすめしません。</div>

<p>7. 米を炊いている間にエンドウ豆を茹でる。<br />
豆が浸る程度の水を沸かし、豆を加えて<strong>3分</strong>茹でたらザルにあげて<strong>塩一つまみ</strong>（分量外）をふっておく。</p>
