<p>このきんぴらはごぼうをささがきでなく細切りにする事で歯ごたえを残して仕上げます。<br />
味付けも砂糖なしでみりんを使い少しあっさり目に、またごま油で炒める事で香り良く仕立てるのがポイントです。</p>

<p>松茸は中国やアメリカ産のものでも十分です。<strong>傘の開いているもの</strong>が香りが強いのでおすすめです。</p>

<li>ニンニク（中サイズ）　1かけ</li>

<li>パルミジャーノ・レッジャーノ 10g</li>
<li>EXVオリーブオイル　　大さじ2</li>
<li>バター　　　　　　　　小さじ1</li>
<li>塩　　　　　　　　　　小さじ1/5</li>
<li>すだちの皮（あれば）　適量</li>

<p>イタリアンパセリの代わりに三つ葉もおすすめ。<br />
パルミジャーノはパルメザンチーズ缶で代用可能。</p>

<li>鯛の切り身　　　　2切れ</li>
<li>薄口醤油　　　　　大さじ1</li>
<li>出汁　　　　　　　400cc</li>
<li>三つ葉　　　　　　4〜5本</li>
<li>柚子等の柑橘の皮（あれば）　少量</li>
</ul>
<p>出汁は出汁パックがおすすめ。<br />
白だしや顆粒の出汁等塩分を含む出汁は少し薄めに希釈し、また炊く前の<strong>塩気がお吸い物と同じくらい</strong>になるように薄口醤油を加減する。</p>

<p>4. 湯を沸かし、鯛の切り身を5秒茹でて冷水に落として冷ましたらすぐにキッチンペーパー等で水気を拭き取る。</p>

<p>椎茸は他のキノコでも良いですし無くても構いません。<br />
青ネギは長ネギの青い部分や小松菜などの青味で代用可能です。</p>

<p>炊き込みご飯といっても、出汁と生姜をたっぷりときかせて炊いたご飯に塩焼きした秋刀魚を乗せるスタイル。</p>
<p>秋刀魚は身が薄いので、ご飯と一緒に炊くよりもこの方法の方が火が通り過ぎず良いと思います。<br />
他の青魚も同様です。</p>
<h2>材料（3〜4人前）</h2>
<p>・秋刀魚　　　2尾<br />
・米　　　　　2合<br />
・水　　　　　400cc<br />
・酒　　　　　大さじ2<br />
・薄口醤油　　大さじ1<br />
・塩　　　　　小さじ1<br />
・出汁パック　1個<br />
・生姜　　　　2かけ<br />
・山椒　　　　適量</p>
<p>今回は出汁パックを使用して出汁を用意しましたが、もちろん昆布とかつおで丁寧に引くとより上質なものが取れます。<br />
また、手軽に<strong>顆粒だしや白だし、めんつゆ等を使っても美味しく作れます</strong>。<br />
その場合は、<strong>吸い物よりも気持ち薄いくらいの塩加減</strong>になるように調整してください。</p>

・秋刀魚に塩を振り、少し置いて水気を拭き取る。<br />
・秋刀魚は強火でパリッと香ばしく焼く</div>
<h2>作り方</h2>
<p>1. 米を優しく研いで<strong>15分水に浸けて吸水させる</strong>。15分経ったらざるにあげておく。</p>
<p>2. この間に<strong>出汁400cc</strong>をとる。出汁が取れたらボウル等に移して少し冷ましておく。（顆粒だしや白だしなどを使う場合は省略）</p>

<p>5. 吸水した<strong>米2合</strong>に<strong>出汁400cc</strong>と<strong>酒大さじ2、薄口醤油大さじ1、塩小さじ1/2、生姜</strong>を加えて炊く。</p>

<p>6. ご飯を炊いている間に秋刀魚を焼く。<br />
秋刀魚の水気をキッチンペーパーで拭き取り、<strong>強火</strong>のグリルで両面が香ばしくパリッとなるまで焼く。（片面5分ずつが目安）</p>

										<content:encoded><![CDATA[<p><strong>手羽から出る鶏のうまみをとろとろの冬瓜にたっぷりと吸わせていただく煮込み料理</strong>をご紹介します。</p>
<p>今回はうどんを加えて鍋仕立てにしていますが、もちろん大皿に盛っておかずとしても頂けます。</p>
<p>冬瓜はその名に紛らわされがちですが、実は<strong>夏から秋が旬</strong>の野菜。<br />
夏に収穫して冬まで持つことから冬瓜と呼ばれているそう。</p>
<p>火を入れると大根のようなとろとろの食感に、瓜の独特の清涼感のある香りがなんとも言えず美味しいです。<br />
近頃はスーパーや八百屋でカットしてあるものが売っていますのでぜひ手に入れた際には試してみてください。</p>
<h2>材料（2〜3人前）</h2>
<p>・手羽元　　　　8~10本<br />
・冬瓜　　　　　1/8個（約400g）<br />
・青ねぎ　　　　5本<br />
・にんにく　　　1かけ<br />
・水　　　　　　1200cc<br />
・酒　　　　　　100cc<br />
・塩　　　　　　小さじ2<br />
・うどん　　　　1玉</p>
<p>青ねぎは普通の長ネギでもOK。<br />
にんにくは少しパンチを効かせるために使いますが、好みで生姜に替えても美味しいですよ。</p>

<p>50分</p>
<p>※煮込む時間はかかりますが手間はほとんどかかりません。</p>
<h2>作り方</h2>
<p>1. 鍋に<strong>手羽元8~10本</strong>と<strong>にんにく1かけ</strong>粗みじん切り、<strong>水1200cc</strong>、<strong>酒100cc</strong>を加えて<strong>強火</strong>にかける。</p>

<p>2. 沸騰したらアクを取り除き、蓋をして<strong>弱火に落として40分</strong>煮込む。</p>

味見をして塩味を整える。水が蒸発して少なすぎる場合や味が濃い場合は水を加えて調整する。</p>

<p>今回作るのはタイトルにもある通り、生クリームを使わず牛乳で作るクリームパスタ。</p>

<h2><strong>材料（２人前）</strong></h2>



<p>・キノコ　　　　　　好きなものを好きなだけ<br />・タリアテッレ　　　160g<br />・ベーコン　　　　　50g<br />・牛乳　　　　　　　100cc<br />・チーズ　　　　　　好きなものを好きなだけ<br />・オリーブオイル　　小さじ1<br />・バター　　　　　　5g<br />・塩、胡椒　　　　　適量<br />・イタリアンパセリ　適量</p>
<p>きのこやチーズは3種類以上使うと味に奥行きが出ます。</p>
<p>今回のきのこは舞茸、椎茸、乾燥ポルチーニを使用しました。<br />乾燥ポルチーニはちょっと入手のハードルが高いかもしれませんが、ぜひ見つけたら買ってみて下さい。香り高く料理を1ランク格上げしてくれますよ。</p>

<p>チーズはゴルゴンゾーラ30g、パルミジャーノ・レッジャーノ5g、ペコリーノロマーノ5gを使用しています。<br />上にも書いた通りパルミジャーノだけでもOK！<br />チーズの量は1人前で20gが目安ですが、好みのものを好みで増減してください。</p>
<p>また、パスタは太めのスパゲッティもおすすめです。</p>

<p>1. イタリアンパセリ適量を粗みじん切りに、ベーコン50gを拍子切りにする。</p>
<p>2. 乾燥ポルチーニは軽く水洗いし、ぬるま湯で戻す<br />キノコは石突を落として、一口大に手で割く。</p>

<p>４．キノコがしんなりしてきたら、<strong>戻したポルチーニと戻し汁を100cc</strong>程加えキノコの出汁をとるイメージで2分くらい煮る。<br />※乾燥ポルチーニがない場合は代わりに水を100cc加える。</p>



<p>このあたりでパスタを茹でる。</p>

<p>５．牛乳100ccを加え、<strong>沸騰したらすぐに火を消して</strong>チーズを加える。<br />チーズが溶けたら味見をし、塩 or 牛乳で味を整える。</p>

<p>オーブンがあればセミドライトマトは自宅で簡単に作ることができます！<br />
ラップや蓋をしないで冷蔵庫に入れれば1週間程度は日持ちしますし、そのままおつまみとして食べてもとっても美味しいのでぜひ試してみて下さい。</p>
<p>1. ミニトマトを横半分にカットし、断面に薄く塩をふる。</p>
<p>2. 断面を上にしてオーブンに入れ、100℃で2時間加熱して完成。</p>

										<content:encoded><![CDATA[<p>秋茄子は嫁に食わすなと言われますが、むしろ嫁にこそ食わせたい最高の焼き茄子をご紹介します。</p>
<p>私が1番美味しいと思う茄子の焼き方は、<strong>皮が真っ黒に焦げるまでグリルやオーブン、もしくは直火で焼く</strong>方法。<br />
皮ごと焼くことでが中で蒸し焼きになりトロトロに。<br />
また、焦げた皮の香りが身に少しうつり、まるで燻製したかの様な香ばしい焼き茄子になります。</p>
<p>今回は焼き茄子を鰹節と醤油でシンプルに頂く基本のレシピになりますが、様々なお料理に応用がききます。<br />
※鰹節なしであれば、ベジタリアンやビーガンの方にもおすすめ</p>
<p>冷蔵庫で2日くらいは保存がききますので、ちょっと多めに作っておいて次の日は別の料理に使うと便利ですよ。<br />

<p>2. 魚焼きグリルに並べて、<strong>強火で両面を10分ずつ</strong>焼く。</p>
<p>もし魚焼きグリルがなければ、コンロに網を乗せて直火で焼くかオーブントースターで温度Maxでも焼けます。</p>

<p>・皮がしっかり焦げていれば手でするっと剥けるはずですが、剥きづらい場合は包丁やテーブルナイフを使って剥いてください。</p>
