<p>今回ご紹介する坦々麺は濃厚タイプ。<br />
クリーミーな胡麻スープにカリッと香ばしい肉味噌のアクセントがポイントです。<br />
またお好みでラー油に加えて花椒をかけるのがおすすめです。</p>

<p><strong>肉味噌</strong><br />
・牛挽肉　　　　　　80g<br />
・甜麺醤　　　　　　小さじ1<br />
・醤油　　　　　　　小さじ1<br />
・酒　　　　　　　　小さじ1</p>
<p><strong>スープ、その他具材</strong><br />
・中華麺　　　　　　1玉<br />
・長ネギ　　　　　　5~6cm<br />
・チンゲンサイ　　　2枚<br />
・練り胡麻　　　　　大さじ3<br />
・醤油　　　　　　　大さじ2<br />
・鶏がらスープの素　小さじ1<br />
・酢　　　　　　　　小さじ1<br />
・ラー油　　　　　　大さじ1<br />
・にんにく　　　　　小1/2かけ<br />
・花椒　　　　　　　お好み<br />
・アーモンド　　　　お好み</p>
<p>牛挽肉は豚や合い挽きでもOK！<br />
また、甜麺醤がない場合は醤油を小さじ2に増やして砂糖小さじ1を加えて代用して下さい。</p>
<p>青みのチンゲンサイは小松菜や青ネギなどお好みのもので代用可能です。</p>
<p>にんにくはチューブのものでもOK。</p>
<p>ナッツは仕上げに砕いて加え、食感のアクセントに使いますが家に無い場合は入れなくても構いません。<br />
また、アーモンドの他にピーナッツやカシューナッツ、くるみ等お好みのものでOKです。</p>

<p>2. カリッと香ばしく炒まったら一度火を止めて、<strong>甜麺醤小さじ2、醤油小さじ2、酒小さじ2</strong>を加えて混ぜ合わせ、再度中火で水分が飛ぶまで炒める。</p>

<p><strong>具材<br /></strong>・中華麺　2玉<br />・鶏胸肉　半分（150g）<br />・豆腐　　半丁（150g）<br />・筍　水煮　100g<br />・長ネギ　1本<br />・えのき　半束<br />・たまご　1個</p>
<p><b>スープ</b><br />・鶏がらスープの素　大さじ1<br />・水　700cc<br />・醤油　　大さじ4<br />・胡椒　　大さじ1<br />・片栗粉　大さじ1<br />・黒酢　　大さじ4<br />・ラー油　お好み</p>
<p>具材はお好きにアレンジ頂いてOKです。<br />お肉は豚肉でもいいですし、野菜はもやしやニラ、白菜、椎茸あたりもお勧めです。<br />下のポイントにもありますが、大事なのはどれも大体同じくらいの分量にすることです。</p>
<p>また、鶏がらスープの素はなくても作れます。<br />黒酢も通常の米酢で代用可能です。</p>
