<p>記事では土鍋を使って炊いていますが<strong>もちろん炊飯器でもOK！<br />
</strong>鯛以外のどんなお魚でも同じレシピで美味しい炊き込みご飯ができますのでぜひマスターしてください！</p>

<li>鯛の切り身　　　　2切れ</li>
<li>薄口醤油　　　　　大さじ1</li>
<li>出汁　　　　　　　400cc</li>
<li>三つ葉　　　　　　4〜5本</li>
<li>柚子等の柑橘の皮（あれば）　少量</li>
</ul>
<p>出汁は出汁パックがおすすめ。<br />
白だしや顆粒の出汁等塩分を含む出汁は少し薄めに希釈し、また炊く前の<strong>塩気がお吸い物と同じくらい</strong>になるように薄口醤油を加減する。</p>

<li>鍋（炊飯器）に米と出汁、<strong>薄口醤油大さじ1</strong>を加えて炊飯する。

<p>4. 湯を沸かし、鯛の切り身を5秒茹でて冷水に落として冷ましたらすぐにキッチンペーパー等で水気を拭き取る。</p>

<p>実はこのご飯見た目以上に手間いらずでとっても簡単！<br />
というのも桜海老からうまみが十分出るので<strong>出汁を別に取らなくて良い</strong>のです。<br />
桜海老は釜揚げのものがおすすめですが、手に入らなければ乾燥のものでもOKです。</p>
<p>菜の花は一緒に炊くと味がご飯全体に周ってしまうのと、色が飛んでしまうのでさっと茹でてお浸しにしたものを最後に散らします。</p>

<p>炊き込みご飯といっても、出汁と生姜をたっぷりときかせて炊いたご飯に塩焼きした秋刀魚を乗せるスタイル。</p>
<p>秋刀魚は身が薄いので、ご飯と一緒に炊くよりもこの方法の方が火が通り過ぎず良いと思います。<br />
他の青魚も同様です。</p>
<h2>材料（3〜4人前）</h2>
<p>・秋刀魚　　　2尾<br />
・米　　　　　2合<br />
・水　　　　　400cc<br />
・酒　　　　　大さじ2<br />
・薄口醤油　　大さじ1<br />
・塩　　　　　小さじ1<br />
・出汁パック　1個<br />
・生姜　　　　2かけ<br />
・山椒　　　　適量</p>
<p>今回は出汁パックを使用して出汁を用意しましたが、もちろん昆布とかつおで丁寧に引くとより上質なものが取れます。<br />
また、手軽に<strong>顆粒だしや白だし、めんつゆ等を使っても美味しく作れます</strong>。<br />
その場合は、<strong>吸い物よりも気持ち薄いくらいの塩加減</strong>になるように調整してください。</p>

・秋刀魚に塩を振り、少し置いて水気を拭き取る。<br />
・秋刀魚は強火でパリッと香ばしく焼く</div>

<p>1. 米を優しく研いで<strong>15分水に浸けて吸水させる</strong>。15分経ったらざるにあげておく。</p>
<p>2. この間に<strong>出汁400cc</strong>をとる。出汁が取れたらボウル等に移して少し冷ましておく。（顆粒だしや白だしなどを使う場合は省略）</p>

<p>美味しいカレーの条件、それはこの4つだ！</p>
<h3>スパイシーである</h3>
<p>ここで言うスパイシーとは決して辛いという意味ではなく、<br />
<strong>スパイスの香り、味わいが際立ちながらも調和している</strong>事を指しています。<br />
市販のカレーはメーカーが完璧なスパイスの配合をしているはずだ！という意見もありますが、<br />
先述の通り好みは人それぞれ。<br />
<strong>胡椒や唐辛子などの身近なスパイスやガラムマサラを使って調味する</strong>のも楽しいですよ。<br />
こうするとお子さんに合わせて甘口のルーをお使いの家庭でも、皆好みで調整できるのも嬉しいポイントです。</p>

<p>カレーは実はルーを溶かす前に勝負はついています。<br />
単なる水に溶かしただけのカレーよりも、<strong>うまみのしっかりと出たスープ</strong>で作ったカレーの方が旨いに決まっています。<br />
あれこれと隠し味を加えても、どうも物足りない味になってしまった経験はありませんか？<br />
それは恐らくうまみが足りていないから。</p>
<p>うまみの強いカレーを作るために、私はグルタミン酸の豊富な<strong>トマト</strong>を加え、肉のイノシン酸との「<strong>うまみの相乗効果</strong>」を利用します。<br />
ただしトマトカレーになってしまわないよう、トマトが前面に出ない程度の量（4人前で200gが目安）にとどめるのもポイントです。</p>

<h3>野菜の甘味が溶け出している</h3>
<p>スパイスの香味とうまみに加え、所謂コクを感じさせるためには優しい甘味が効果的です。<br />
はちみつやリンゴを加えるレシピもありますが、私は野菜の控えめな甘味が丁度良いと思います。<br />
この野菜の甘味を加えるためには<strong>玉ねぎを多めに入れる</strong>こと。<strong><br />
</strong>そして、出来れば水でなく野菜の皮やへたなどを煮出した<strong>野菜だし</strong>を使うのがおすすめです。<br />
また、玉ねぎはあくまで甘味を加える役割。<br />
飴色に炒めて香味を引き出すのではなく、電子レンジで加熱するだけでOKです。</p>
<div class="information-box common-icon-box">野菜の皮やへたは捨てずにジップロックに入れて冷凍しておくとカレー以外にも様々な煮込み料理に使えます。</div>
<h3>舌触りなめらか</h3>
<p>これは完全に好みですが、私はカレーに<strong>じゃがいもを入れません</strong>。<br />
なぜなら煮崩れてカレー全体がどろっと、ざらっとしてしまうから。<br />
また、ルーが綺麗に溶けずにダマになってしまうのも舌触りを悪くする要因。<br />
<strong>ルーは必ず火を止めてから加えて溶かす</strong>ことでなめらかなカレーに仕上がります。</p>
<p>以上4点が私のカレーのこだわり。<br />
では、前置きが長くなりましたが作り方をご紹介します。</p>
<h2>材料（4人前）</h2>
<p>・カレールー　　　　　4皿分<br />
・鶏もも肉　　　　　　2枚（500~600g）<br />
・玉ねぎ　　　　　　　大2個<br />
・にんにく　　　　　　中1かけ<br />
・トマトホール缶　　　200g（1/2缶）<br />
・サラダ油　　　　　　大さじ1<br />
・ガラムマサラ　　　　お好み<br />
・胡椒　　　　　　　　お好み<br />
・野菜だし　　　　　　600cc</p>
<p>ルーは個人的には<strong>ジャワカレーの辛口</strong>推しですが、もちろんお好みのものを選んで下さい。</p>
<p>肉ももちろんお好みで豚肉や牛肉で代用いただいても構いません。<br />
ただし、その場合は部位やカットによって煮込み時間を調整して下さい。<br />
薄切り肉であれば鶏もも肉と同じように15分煮込めばOKです。</p>
<p>野菜だしが用意できない方は水でも構いません。</p>

<p>1. 野菜だしをとる。野菜の皮やヘタなどを集め、650ccの水と一緒に強火にかける。沸騰したら弱火に落として5分煮出し、ざるでこす。</p>

出汁は昆布とかつおで丁寧にひいた一番出汁がベストですが、手軽な出汁パックもおすすめです。<br />
もちろん顆粒のものでも構いません。<br />
ただし、塩分が含まれているものを使う場合は醤油の量を少し減らして調整してください。</p>

<p>本場台湾では豚のブロック肉を長時間煮込み、揚げエシャロットや干しエビなどを加えるのですが、家庭で作るのにはハードルが高いですよね。<br />
今回は手軽に<strong>豚バラ肉のスライス</strong>を使い、たったの15分で仕上げます。<br />
その他の具材も長ネギ、生姜、小松菜、たまごとどこでも手に入るものばかり。<br />
覚えておくと超便利です。</p>
<p>決め手は五香粉というシナモンやスターアニスなどが入ったミックススパイス。<br />
これが入ると一気に日本料理から台湾料理らしい香りになります。<br />

<p>豚バラ肉はできれば2mmくらいの気持ち厚めの薄切りのものがおすすめです。<br />
また、脂身と赤身のバランスが良いものを選んでください。</p>

<p>煮穴子が柔らかいので、ご飯は通常よりも水を気持ち減らして少しだけ硬めの炊き加減にするのがおすすめです。</p>

耐熱皿にたまごを割り入れ、<strong>フォークで黄身、白身に数箇所穴をあける。<br />
</strong>　ひたひたになるまで水を加えてラップをし、<strong>1個につき700Wの電子レンジで40秒加熱</strong>する。<br />
予熱でもたまごが固まるので、様子を見ながら<strong>少しゆるい位で加熱を止める</strong>。</p>

<p>レシピといってもいつものご飯と一緒に炊くだけで超簡単。<br />
じゃこと野沢菜に塩気があるので味付けも必要ないのですが、これがとんでもなく美味しいんです。</p>
<p>今回は鉄鍋（ストウブ）でご飯を炊きましたが、もちろんいつも通り炊飯器で炊いてもOKです。<br />
その場合、水加減もいつも通りで大丈夫です。</p>

・ちりめんじゃこ　1パック(50g）<br />
・野沢菜漬け　　　1パック(170g）<br />
