今回は魚の煮付けを切り身を使って手軽に、そしてふっくら仕上げるレシピをご紹介します。</p>
<p>記事ではお魚には金目鯛を使い「金目鯛の煮付け」を作りますが、真鯛やカレイなどの他の白身魚やサバなどの青魚でも美味しく作れますからぜひお試しください。</p>
<h2>材料（2人前）</h2>
<ul>
<li>金目鯛（切り身）　2切れ</li>
<li>ごぼう　　　　　　1/3本（80g）</li>
<li>酒　　　　　　　　100cc</li>
<li>水　　　　　　　　100cc</li>
<li>濃口醤油　　　　　30cc（大さじ2）</li>
<li>みりん　　　　　　30cc（大さじ2）</li>
<li>すだち・柚子等の柑橘の皮（あれば）　少量</li>
</ul>
<p>料理酒には塩が含まれるため、できれば純米酒を使ってください。</p>
<p>今回は付け合せに一緒にごぼうを炊きますが、小松菜などの青菜や長ネギでもOK。<br />
青菜の場合は色が飛ばないように煮上がる直前に鍋に加えましょう。</p>

<li>金目鯛の皮面に十字に切れ込みを入れる。

<li>フライパンに金目鯛とごぼう、<strong>酒100cc、水100cc、濃口醤油30cc（大さじ2）、みりん30cc（大さじ2）</strong>を加え、フライパンよりも一回り小さく折ったアルミホイルを落とし蓋にして<strong>強火にかけ、沸騰してから5分煮る</strong>。

<p>じゃこのうまみに実山椒の爽やかな香りと刺激がなんともたまらなく、ご飯が何杯でも食べられますよね。</p>
<p>実山椒は5月中旬から7月にかけての短い間しか採れませんから、スーパー等で見かけた際にはぜひ手にとってみてください。</p>
<p>私のちりめん山椒は<strong>甘さ控えめのさっぱりとした味付け</strong>。<br />
山椒を少し多めに加えるのもポイントです。</p>
<p>作り方は実に簡単。<br />
少しのコツでとっても美味しいちりめん山椒が出来るのでぜひお試しください。</p>
<h2>材料（作りやすい分量）</h2>
<ul>
<li>ちりめんじゃこ　　　　70g（2パック）</li>
<li>実山椒（下処理済）　　大さじ2</li>
<li>酒　　　　　　　　　　50cc</li>
<li>薄口醤油　　　　　　　40cc</li>
<li>みりん　　　　　　　　20cc</li>
</ul>
<p>この分量で10人前くらいのちりめん山椒ができます。<br />
冷蔵庫で約1週間、フリーザーバッグ等で冷凍保存をすれば長持ちします。</p>
<p>じゃこはしらす干しでは煮崩れてしまうので、より乾燥したちりめんじゃこを使いましょう。<br />
薄口醤油がない場合は濃口醤油でもOK。<br />

<p>炊き込みご飯といっても、出汁と生姜をたっぷりときかせて炊いたご飯に塩焼きした秋刀魚を乗せるスタイル。</p>
<p>秋刀魚は身が薄いので、ご飯と一緒に炊くよりもこの方法の方が火が通り過ぎず良いと思います。<br />
他の青魚も同様です。</p>
<h2>材料（3〜4人前）</h2>
<p>・秋刀魚　　　2尾<br />
・米　　　　　2合<br />
・水　　　　　400cc<br />
・酒　　　　　大さじ2<br />
・薄口醤油　　大さじ1<br />
・塩　　　　　小さじ1<br />
・出汁パック　1個<br />
・生姜　　　　2かけ<br />
・山椒　　　　適量</p>
<p>今回は出汁パックを使用して出汁を用意しましたが、もちろん昆布とかつおで丁寧に引くとより上質なものが取れます。<br />
また、手軽に<strong>顆粒だしや白だし、めんつゆ等を使っても美味しく作れます</strong>。<br />
その場合は、<strong>吸い物よりも気持ち薄いくらいの塩加減</strong>になるように調整してください。</p>

・秋刀魚に塩を振り、少し置いて水気を拭き取る。<br />
・秋刀魚は強火でパリッと香ばしく焼く</div>

<p>1. 米を優しく研いで<strong>15分水に浸けて吸水させる</strong>。15分経ったらざるにあげておく。</p>
<p>2. この間に<strong>出汁400cc</strong>をとる。出汁が取れたらボウル等に移して少し冷ましておく。（顆粒だしや白だしなどを使う場合は省略）</p>

<p>6. ご飯を炊いている間に秋刀魚を焼く。<br />
秋刀魚の水気をキッチンペーパーで拭き取り、<strong>強火</strong>のグリルで両面が香ばしくパリッとなるまで焼く。（片面5分ずつが目安）</p>

・新じゃがいも（小芋）　300g<br />
・生姜　　　　　　　スライス3枚<br />
・三つ葉　　　　　　5~6本<br />
・ごま油　　　　　　小さじ1,1/2<br />
・塩　　　　　　　　小さじ1/2<br />
・砂糖　　　　　　　小さじ1/2<br />
・鶏ガラスープの素　小さじ1/2<br />
・醤油　　　　　　　小さじ1<br />
・水　　　　　　　　250cc<br />
・水溶き片栗粉　　　適量</p>
<p>通常のサイズのじゃがいもを使う場合は、3つが分量の目安になります。</p>
<p>今回は、薬味に三つ葉を使いましたがお好みで青ネギや大葉でも美味しくできます。</p>
<p>鶏ガラスープも和風出汁で代用しても美味しいですよ。</p>

<p>1.<strong>新じゃがいも300g</strong>をよく洗い、シリコンスチーマーに入れ<strong>700Wの電子レンジで5分</strong>加熱する。</p>

<h2>美味しいブリの見分け方</h2>
<p>美味しいブリの見分け方はまず<strong>血合い（赤っぽい部分）</strong>をチェック。<br />
ここが<strong>鮮やかな赤色のもの</strong>が鮮度が良い証です。鮮度が落ちると灰色がかってくるので注意を。</p>
<p>また、同じブリでも背中と腹の部分で脂の乗りがかなり違います。<br />
どちらが良いかは好みですが、腹の部分は背中に比べて脂が乗って甘くこってりした味わいに、背の部分は腹に比べると味が濃く少しあっさりしています。<br />
見分け方は皮の色！<strong>腹身は皮の色が白く、背中の皮は</strong><strong>黒く</strong>なっています。</p>
