<p>トレビスとはイタリア原産の紫キャベツによく似た野菜。（イタリアではラディッキオと呼ぶそう）<br />
お味はキャベツよりも柔らかく、独特のほろ苦さが特徴です。</p>

<li>イチゴ　　　　　　　　　　　　5~6粒</li>
<li>パルミジャーノ・レッジャーノ　10g</li>
<li>EXVオリーブオイル　　　　　　大さじ1</li>
<li>バルサミコ酢　　　　　　　　　大さじ1</li>
<li>塩　　　　　　　　　　　　　　小さじ1/5</li>
</ul>
<p>パルミジャーノの代わりにモッツァレラを使っても美味しい。</p>
<p>バルサミコは<strong>長期熟成</strong>の甘みが強くとろみがついたタイプを使う。<br />
さらっとした熟成の浅いものやワインビネガーで代用する場合は<strong>大さじ1のはちみつ</strong>を追加すると良い。</p>

<p>トラパネーゼとは<strong>トマトとバジル、アーモンドを使ったソースで、トマトのうまみと酸味にバジルのフレッシュな香り、アーモンドのコクがマッチした爽やかで濃厚な味わい。</strong></p>
<p>ソースは火を使わずに作ることができるので、暑い夏の日にもピッタリです。</p>
<p>今回はスパゲッティに合わせますが、現地ではブジアーテという渦上の手打ちパスタで食べられることが多いようです。<br />
他にもパンに塗ったり、野菜や魚のフライやサラダやカルパッチョに合わせたり、何でも合う超万能ソースです。</p>
<p>ベジタリアンやビーガンの方にもおすすめです。<br />

<p>アボカドは皮がやや黒っぽく、指で軽く押すと柔らかくなっているものが熟している証。<br />
熟していないものはこの料理には向いていないので、室温で2~3日置いて追熟させて使いましょう。</p>

<p>3. アボカドの種に沿って包丁をぐるっと一周回し、切れ目を入れたらひねって半分に割る。</p>

<p>5. アボカドを適当な大きさに切って、ボウルに移し<strong>レモン1/2個分の果汁と塩小さじ1/3</strong>を加えてヘラやマッシャー等で潰す。</p>

<p>アメリカのテキサスにてメキシコ系移民によって生み出されたこの料理は、アメリカ全土ならず世界中で大人気。<br />
今日はそんなチリコンカンを自宅でも簡単かつ本格的に作ることの出来るレシピでご紹介します。</p>
<p>一度にたくさん作って冷凍しておけば日持ちもするので、作り置きにもおすすめです。</p>
<h2>材料（3〜4人前）</h2>
<ul>
<li>合い挽き肉　　　　500g</li>
<li>玉ねぎ　　　　　　中サイズ1個</li>
<li>にんにく　　　　　中サイズ1かけ</li>
<li>キドニービーンズ　1パック(豆だけで約230g)</li>
<li>トマト缶　　　　　1個(400g)</li>
<li>クミンパウダー　　小さじ1</li>
<li>カイエンペッパー（一味唐辛子）　小さじ1/2</li>
<li>塩　　　　　　　　小さじ1</li>
<li>オリーブオイル　　小さじ2</li>
</ul>
<p>キドニービーンズは缶詰か紙パックの水煮のものを使用。</p>

<p>2. フライパンに<strong>オリーブオイル小さじ2と合い挽き肉500g、塩小さじ1</strong>を加え、<strong>中火</strong>で挽き肉を焼く。</p>

<p>3. 肉が焼けたら玉ねぎとにんにくを加えて一緒に炒める。</p>

ただし、全て拭き取ってしまうとコクがなくなるのでほどほどに。</div>

<p>4. 玉ねぎが透き通ってきたら<strong>水200cc、トマト缶1缶、水気を切ったキドニービーンズ1パック、クミン小さじ1、カイエンペッパー小さじ1/2</strong>を加えてトマトを潰しながらかき混ぜ、強火で沸騰させる。</p>

<p>5. 沸騰したら中弱火に落として20分コトコト煮る。</p>

<p>6. 仕上げに強火にかけて一気に煮詰める。ヘラ等で線を引いて道が出来るくらいまで煮詰めたら完成！<br />

<p>6. 鍋に米と<strong>出汁200cc、薄口醤油大さじ1、塩1つまみ、刻んだ油揚げ</strong>を加えて炊飯する。<br />
鍋で炊飯する場合は強火にかけ沸騰したら極弱火に落として13分。<br />
炊飯器の場合は通常通りの炊飯でOK！</p>

濃口醤油は色が強すぎるのでおすすめしません。</div>

<p>ベースとなるのは南イタリアのプーリア州の郷土料理。<br />
現地では、チーマディラーパという菜の花に良く似た野菜をくたくたに煮込んでオレキエッテという手打ちパスタと合わせるそうで、私も以前乾麺のオレキエッテを使った少し手の込んだレシピを書いています。</p>

・EXVオリーブオイル　大さじ1</p>
<p>アンチョビは便利なチューブタイプの物でもOK。<br />
オリーブオイルはぜひ香りの良いものをお使い下さい。</p>

<p>1. パスタを茹でる湯を沸かす。茹で汁には味噌汁と同じくらいの塩っぱさになるよう塩を加える。</p>

1Lの湯に小さじ2の塩が目安です。</div>
<p>2. 菜の花を3cm程度の長さにカットする。茎が太いものは縦半分にカットしておく。</p>

今回は中華の青菜炒めをイメージした、少しにんにくを効かせた味付けでお酒もご飯も進む仕立てでご紹介します。</p>

<p>・芹　　　　　1束<br />
・にんにく　　中サイズ1かけ<br />
・サラダ油　　大さじ1<br />
・醤油　　　　小さじ2<br />
・ラー油　　　お好み</p>
<p>辛いものが苦手な方はラー油を入れなくても構いません。<br />
また、にんにくはチューブで代用してもOKです。</p>

なぜなら<span class="fz-18px bold blue"><strong>野菜は焼くだけでめちゃめちゃ美味しい</strong></span>のです。</p>
<p>焼く野菜は何でもOK！<br />
特に旬の野菜がおすすめですが、もちろん冷蔵庫に余っている常備野菜でも良いです。</p>
<p>野菜を美味しく焼くことができれば、余った野菜はもちろん使い所の浮かばない野菜たちも楽しむことが出来るのが最大の利点。</p>
<p>大事なのは炒め物のように動かしたりせず、<strong>中火から弱火でじっくりと焼いて焼き目をつける</strong>こと。<br />
味付けは醤油やポン酢、お好みのドレッシングなど何でも良いのですが、おすすめは<strong>美味しい粗塩と美味しいオリーブオイル</strong>。</p>

<p>1. 野菜を大ぶりにカットする。</p>
<p>2. オリーブオイルを少量ひいたフライパンに並べて<strong>中火</strong>にかける。</p>

<p>3.  あまり動かさずにじっくりと焼き、焼き目がついたら返す。</p>
