<li>出汁パック　1個</li>
<li>味噌　　　　100g</li>
<li>ごぼう　　　1/2本（150g）</li>
<li>にんにく　　1かけ</li>
<li>白菜　　　　1/8個</li>
<li>長ねぎ　　　1本</li>
<li>絹ごし豆腐　1/2丁（150g）</li>
<li>豚こま肉　　200g</li>
<li>冷凍うどん　1玉</li>
</ul>
<p>出汁は昆布や顆粒だしなど好みのもので用意しても良い。出汁に塩分が含まれる場合は味噌の量を調整する。<br />
味噌は無添加（出汁無し）のものを使う。<br />
野菜は玉ねぎや人参、キャベツなど好みのものを入れてOK。</p>

少ない材料でできるシンプルで極上のレシピをご紹介します。</p>
<p>このレシピは様々な鶏団子の基本となるもの。<br />
好みでネギや生姜、にんにく等を加えたり柚子の皮を刻んで混ぜ込む等のアレンジも自由自在です。</p>
<p>今回は鶏団子のアレンジとして一緒に野菜のスープを作ります。<br />
野菜は冷蔵庫の余り物で自由な組み合わせでも美味しく作れます。ぜひお試しください。</p>
<h2>材料（２人前）</h2>
<p>鶏団子</p>
<ul>
<li>鶏ももひき肉　　　250g</li>
<li>塩　　　　　　　　小さじ1/2</li>
<li>胡椒　　　　　　　適量</li>
<li>ごま油　　　　　　小さじ1</li>
<li>溶き卵　　　　　　1/2個分（余った分はスープや雑炊に使う）</li>
</ul>
<p>野菜スープ（野菜は自由にアレンジ可）</p>
<ul>
<li>水　　　　　　　　400cc</li>
<li>鶏ガラスープの素　小さじ1</li>
<li>醤油　　　　　　　小さじ1</li>
<li>大根　　　　　　　5cm分</li>
<li>椎茸　　　　　　　1個</li>
<li>青ネギ　　　　　　2本</li>
<li>卵　　　　　　　　1/2個分</li>
</ul>
<h2>作り方</h2>
<p>1. <strong>鶏ももひき肉250g</strong>に<strong>塩小さじ1/2（2.5g）</strong>と<strong>胡椒を適量、ごま油小さじ1、溶き卵1/2個分</strong>を加え、スプーンでよく混ぜ合わせる。</p>

例：500gの鶏肉であれば塩は小さじ1(5g)。</div>

<p>2. 湯を沸かし、スプーンを2本使って鶏団子を落とす。沸騰後中火で3分ほど煮たら完成。</p>

<p>キムチはうまみのかたまりのような食材。<br />
これをごま油で炒めてから煮ることで、白菜の甘みを引き立てながらうまみを更に凝縮することがポイントです。</p>
<p>今回出汁には昆布を使っていますが、具材のうまみだけでも十分ですから無いようであれば入れなくても美味しく出来ます。</p>

<li>絹ごし豆腐　　　　　　　　1/2丁</li>
<li>にんにく　　　　　　　　　1かけ</li>
<li>味噌　　　　　　　　　　　大さじ2</li>
<li>濃口醤油　　　　　　　　　大さじ2</li>
<li>水　　　　　　　　　　　　1000cc</li>

<p>本場韓国では熟成の進んだ酸っぱいキムチを使いスープに砂糖を足して作ることが多いようですが、日本で手に入るキムチは熟成も浅く甘めのものが多いので砂糖を加えずに、味噌でコクを補います。</p>
<p>豚肉はバラ肉も相性が良くおすすめ。<br />
具材は好みでアレンジしてください。他にも春菊、豆もやし、餅などはおすすめです。</p>

冷凍の剥き身あさりを使うえば砂抜きなどの下処理もいらずに15分で出来ますので、ぜひお試し下さい。</p>

<p>(*1)コチュジャンが無い場合は普通の味噌でもOK。</p>
<p>(*2)韓国唐辛子は日本の唐辛子に比べて辛味が弱く香り高い唐辛子。<br />
無い場合は一味唐辛子やラー油でも代用可能ですが、韓国唐辛子よりも辛いので分量は好みの辛さに合わせて調整して下さい。</p>

<p>家庭で作るのはハードルが高いと思われがちですが、今回は<strong>手軽に本格的な味を再現できる出来るレシピ</strong>をご紹介します。</p>
<p>本場重慶の火鍋を参考にしていますが、食材や調味料は基本的にスーパーで手に入る食材を使って作りやすいように少しアレンジしています。</p>
<p>中華の調味料は買い揃えるのにハードルを感じる方もいらっしゃると思いますので、代替品についても触れていきます。</p>

・鶏がらスープの素(*1) 　　大さじ1<br />
・豆板醤　　　　　　　　　大さじ1<br />
・豆豉(*2)             　　　　大さじ1<br />
・にんにく　　　　　　　　2かけ<br />
・生姜　　　　　　　　　　2かけ<br />
・鷹の爪　　　　　　　　　お好みの量<br />
・花椒(*3) 　　　　　　　　小さじ1<br />
・五香粉(*4) 　　　　　　　5振り<br />
・サラダ油　　　　　　　　大さじ4<br />

<p>(*1)鶏がらスープは鶏がら1羽分とネギの青い部分をアクを取りながら1時間ほど弱火で煮出すとより本格的に<br />
(*2)豆豉とは黒豆を発酵させた調味料。なければ味噌で代用可能です。<br />
(*3)花椒は日本の山椒で代用可能。量は好みで調整をして下さい。無い場合は入れなくてもOK。<br />
(*4)五香粉は中国のミックススパイス。複雑な香りで一気に本格的な味わいになるので出来れば入れて欲しいですが、、、無くてもOK。ちなみに麻婆豆腐や魯肉飯にも使えます。<br />
(*5)牛脂はスーパーの肉コーナーにあるかと思います。入れることでコッテリとなりますので、お好みで用意してください。無くても少しあっさり美味しく作れます。</p>

										<content:encoded><![CDATA[<p><strong>手羽から出る鶏のうまみをとろとろの冬瓜にたっぷりと吸わせていただく煮込み料理</strong>をご紹介します。</p>
<p>今回はうどんを加えて鍋仕立てにしていますが、もちろん大皿に盛っておかずとしても頂けます。</p>
<p>冬瓜はその名に紛らわされがちですが、実は<strong>夏から秋が旬</strong>の野菜。<br />
夏に収穫して冬まで持つことから冬瓜と呼ばれているそう。</p>
<p>火を入れると大根のようなとろとろの食感に、瓜の独特の清涼感のある香りがなんとも言えず美味しいです。<br />
近頃はスーパーや八百屋でカットしてあるものが売っていますのでぜひ手に入れた際には試してみてください。</p>
<h2>材料（2〜3人前）</h2>
<p>・手羽元　　　　8~10本<br />
・冬瓜　　　　　1/8個（約400g）<br />
・青ねぎ　　　　5本<br />
・にんにく　　　1かけ<br />
・水　　　　　　1200cc<br />
・酒　　　　　　100cc<br />
・塩　　　　　　小さじ2<br />
・うどん　　　　1玉</p>
<p>青ねぎは普通の長ネギでもOK。<br />
にんにくは少しパンチを効かせるために使いますが、好みで生姜に替えても美味しいですよ。</p>
<h2>所要時間</h2>
<p>50分</p>
<p>※煮込む時間はかかりますが手間はほとんどかかりません。</p>
<h2>作り方</h2>
<p>1. 鍋に<strong>手羽元8~10本</strong>と<strong>にんにく1かけ</strong>粗みじん切り、<strong>水1200cc</strong>、<strong>酒100cc</strong>を加えて<strong>強火</strong>にかける。</p>

<p>・豚ロースしゃぶしゃぶ用　350g<br />
・えのき　　　1パック<br />
・しめじ　　　1パック<br />
・椎茸　　　　1パック<br />
・舞茸　　　　1パック<br />
・生きくらげ　1パック<br />
・九条ネギ　　1パック<br />
・絹ごし豆腐　1丁（300g）<br />
・水　　　　　800cc<br />
・昆布　　　　5cm×10cm<br />
・醤油　　　　大さじ4（60cc）<br />
・みりん　　　大さじ4（60cc）</p>
<p>今回は以上のラインナップですが、<strong>きのこはお好きなものをお好きなだけ</strong>使って頂ければと思います。<br />
火を入れると縮むので多めに用意することをおすすめします。</p>
<p>九条ネギは手に入りづらいので、<strong>青ネギや普通の長ネギ</strong>で代用頂いても構いません。</p>

・つゆの味付けは卓上で煮詰まることを考慮して気持ち薄めにする<br />
・お肉をしゃぶしゃぶするときは、弱火でつゆを沸騰させないようにする</div>

<p>1. 鍋に<strong>水800cc</strong>と<strong>昆布5cm×10cm</strong>を加え、<strong>中弱火</strong>にかける。</p>

<p>私の考える最高の湯豆腐とは、<strong>大豆の味が濃い絹ごし豆腐を同じく濃いめの昆布出汁で優しく温め、醤油とごまだれで頂く</strong>もの。<br />
薬味もたっぷりと用意して味変を楽しむのがおすすめ。<br />
今回は、鰹節、青ネギ、揚げ玉、七味唐辛子を用意しましたが、他にもおろし生姜やラー油、柚子胡椒などもおすすめです。</p>
<p>ポイントになるのは<strong>温度</strong>！昆布出汁も、豆腐も沸騰させてはいけません。<br />
昆布は沸騰させると雑味やぬめりが出てしまいますし、豆腐も70〜80度くらいが最も甘味、香りを感じられる温度になります。</p>
<p>併せて簡単にできる自家製のごまだれもご紹介します。ぜひ試してみてください。</p>

<p>・絹ごし豆腐　1丁（350g）<br />
・昆布　　　　10cm×10cm（約10g）<br />
・菜の花　　　3束<br />
・酒　　　　　50cc<br />
・水　　　　　600cc<br />

<p>豆腐はぜひちょっと良いものを選んでください。<br />
絹ごしか木綿かは好みですが、<strong>大豆の味が濃いもの</strong>をおすすめします。<br />
また、菜の花は長ネギや、春菊、せりなど他の野菜でも代用可能です。</p>
<p>昆布はお手頃なもので構いませんので、ケチらずに多めに使ってください。</p>
<p>薬味はお好みのものを好きなだけご用意ください。<br />
※ベジタリアンやビーガンの方は鰹節を省いてください。</p>

<p>1.　鍋に<strong>昆布10cm×10cm</strong>と<strong>水600cc</strong>を加えて10分漬けておく。</p>

<p>6. 昆布と水を<strong>弱火</strong>にかけて温める。<br />
<strong>鍋底に小さい気泡が出てきたら（沸騰前）に昆布を取り出し</strong>、<strong>酒50cc</strong>と<strong>塩小さじ1/3</strong>を加える。</p>

・ぬめり、雑味がでないように沸騰前に昆布は取り出して、多めの酒と少量の塩を加えて豆腐の甘味を引き立てる。</div>

<p>アサリと違い、牡蠣は砂抜きの必要もなく下ごしらえが楽なのも嬉しいですよね。</p>

<p><strong>具材</strong></p>
<p>・牡蠣（加熱用）　8~10個<br />
・絹ごし豆腐　　　2丁<br />
・豚こま肉　　　　200g<br />
・長ネギ　　　　　1本<br />
・えのき　　　　　1パック<br />
・玉ねぎ　　　　　中サイズ半分<br />
・たまご　　　　　2個</p>
<p><strong>スープ</strong><br />
・にんにく　　　　1かけ<br />
・コチュジャン　　大さじ1<br />
・醤油　　　　　　大さじ2<br />
・酒　　　　　　　大さじ2<br />
・韓国唐辛子　　　大さじ2<br />
・昆布　　　　　　5cm×10cm<br />
・ごま油　　　　　大さじ2<br />
・水　　　　　　　600cc</p>
<p>今回は昆布から出汁をとりましたが、顆粒出汁や出汁パック、ダシダなどのお好みの出汁を使っても美味しく作れます。</p>
<p>豆腐はおぼろ豆腐があればより本格的になりますが、絹ごし豆腐で代用ができます。<br />
また、豚こま肉は豚挽き肉でも美味しく作れます。</p>
<p>もちろん、具材はお好みのものでアレンジしてください。ニラや春菊、キムチも美味しいですよ。</p>
<p>韓国唐辛子は日本の唐辛子比べて辛味が少なく香りと甘味のある唐辛子。</p>
<p>大きいスーパーやAmazonで手に入るのでぜひ。少し辛めの配合にしているので、お好みの辛さに合わせて増減してくださいね。</p>

<p>1.鍋に<strong>水600cc、昆布5cm×10cm</strong>を加えて<strong>弱火</strong>にかける。昆布は沸騰直前に取り出す。</p>
